Hey Cooks today we’re making broccoli cheddar soup this soup is creamy and cheesy and cheddar and absolutely fantastic so welcome to the Emy learns to cook Kitchen So today we’re using this really cute large cast iron enamel pan I think this is called Lilac or lavender or something like that I’ll put a link down in the description to it I love the color we got this when we went to the um Lodge Outlet down in Pigeon Forge

If you’re ever down that way go in there right so I have a whole stick of butter in here I have it over medium heat I’m just going to let this melt a little bit okay so it’s just about melted I’m going to go ahead let me turn down a little

Bit I’m going to put an onion in here that’s diced and we’re going to cook it in all this butter I call this we’re going to do a little butter bra right I don’t know if that’s like a technical term or not but that’s what we’re going to do look at that butter

Bra looks amazing so we’re just going to let this uh cook a little bit until the start to get translucent ooh our onions are looking mighty fine here so I’m going to put some carrots these are just one cup of chopped baby carrots and you don’t want

Them so so big like beef stew you just want in little pieces like that I’m also putting one cup of chopped celery same pieces about this I took the celery sticks cut them twice this way and then chopped them just so they won’t be so big in the soup mhm so we’re going

Getting tender you don’t want to let it cook too much otherwise you’ll lose that crisp tender I have a/4 cup of corn starch here I’m going to put 1/4 cup of water in there and I’m just going to stir this until it completely dissolves

Cheese um you don’t want to use the stuff in the package cuz it doesn’t melt very well so I have like 2 lbs of cheese I’m not going to use all this I’m just shredding it right now so I have it in the Brel okay so yeah shred it yourself if you use shredded cheese out of the bag they put like corn starch and flour and sawdust on it and it doesn’t melt that well so you really need to just get a block of cheese and and uh shred it yourself so you’re

Going to just let this work in here we were generous with the three cups and we packed it yeah generous three cups so as this starts to melt it will start to get turn oranger and give us that cheesy texture in consistency it’s weird it’ll take a little bit for it to start
