How to make an easy vegan chickpea stew recipe.

Ingredients:
2 1/2 cups cooked chickpeas, divided
1 tsp. smoked paprika
1 tsp. ground coriander
1 tsp. garam masala
1 tsp. ground turmeric
1 tsp. salt
¼ tsp. red pepper flakes
½ cup coconut cream
2 cups tomato puree
1/3 cup chopped onion
1/3 cup diced red bell pepper
1/3 cup diced green bell pepper
6 cloves garlic, minced
1 tbsp. olive oil
1 tbsp. chopped parsley
Boil 3 cups of chickpeas until tender, reserve the water.
Heat large skillet over medium heat, then add olive oil.
Fry onions for 5 minutes
Add garlic and fry for two minutes.
Add paprika, coriander, garam masala, turmeric, and stir.
Add tomato puree, cover, and cook for 10 minutes.
Blend ½ cup chickpeas in 1 ½ cups water and add to mixture.
Stir to combine then add bell peppers.
Add crush red pepper
Add 2 cups cooked chickpeas
Add salt, coconut cream. Stir, cover, and cook for 25 minutes.
Dish and garnish with chopped parsley.
