Preparation

  1. Heat the oil in a small skillet and add the onions, green pepper and garlic. Cook, stirring often, about two minutes.
  2. Add the tomatoes, thyme, bay leaf, salt and pepper to taste. Cook, stirring, about one minute. Cover closely and cook about five minutes. Uncover and cook until most of the tomato sauce is thickened, about one minute or less.
