500 ml water
130 g starter
14 g salt
650 g bread flour

Filling:
200 g olives
200 g Parmesan cheese
200 g prunes

Add the filling when you laminate the dough, be sure to do it on a damp surface.

Cooking technology:
Combine water, starter and salt. You need to mix everything, then add flour.
1. Knead the dough. Approximately 12 minutes.
The dough should be left to rest for one hour. Cover the bowl with the text with film or a towel.
2. Afterwards, you need to knead the dough thoroughly again, round it and leave it to rest for 45 minutes again. Cover the bowl of dough each time.
3. Lamination:
Wet the table and place the dough on the wet table and start stretching.
Place olives, cheese and fresh thyme on the dough. And gradually you need to fold the dough as I do in the video. Lamination must be done with wet hands.
4. Fold the dough, place in a bowl, cover the bowl with a towel and leave to rest for 45 minutes.
5. Do another fold with wet hands.
6. Sprinkle the table with flour and place the dough on the table.
7. Cut the dough into two parts and fold the workpiece as shown in the video.
8. Place the preparations in baskets, cover the baskets with film sprinkled with flour and leave in the refrigerator for 10-12 hours.
9. Next day, remove the pieces from the refrigerator, place them on baking paper and bake for 15 minutes in a cast iron skillet or on a stone at a temperature of 350F with steam. (place boiling water on the bottom of the oven). After. lower the temperature to 446/230 and bake for another 20 minutes at 410/210.
10. Remove the bread from the oven and enjoy your amazing bread!
