Zaalouk:  The ultimate, smokey Moroccan eggplant salad.

2 medium sized eggplants, charred
2 large tomatoes, peeled and seeded⁣
4T olive oil⁣
3 cloves of garlic, minced⁣
2t ground cumin⁣
2t ground paprika ⁣
1/4t cayenne pepper ⁣(optional)
2T finely chopped parsley ⁣
2T finely chopped cilantro ⁣
1.5T Moroccan vinegar, white vinegar or lemon juice ⁣
Salt to taste ⁣

The eggplant is typically cooked over coals or fire to ensure that the eggplant is charred and has the ultimate smokey taste.  In this case, I used my broiler:  35 minutes directly under the broiler flame, turning the eggplant half way through. ⁣

While the eggplants cooks peel, seed and dice tomatoes.  Once the eggplants are charred, peel them and saute in a pan with olive oil, garlic and a pinch of salt.  After about 10 minutes, add tomatoes, cumin, paprika, cayenne along with chopped parsley and cilantro.  Cook over medium heat until the tomatoes are cooked and the flavors have come together.  Mash the mixture with the back of the spoon while cooking to ensure an smooth mixture. ⁣

Add vinegar or lemon juice and cook a few more minutes.  Adjust seasoning and enjoy!  ⁣

This one definitely gets better as it sits so make it the day before.  ⁣

Today we’re making one of my all-time favorites it’s zalo zuk is a delicious Moroccan dish of smoked eggplant tomatoes and spices traditionally the eggplants are fire roasted over coals but today we’re going to do them directly over an open flame under the broiler I start by pricking the eggplants all over with a

Fork then it’s into the oven until they are blackened and have that signature Char these are so soft and so charred we’re going to Splash in a couple tablespoons of olive oil followed by the egg plant while the eggplant Cooks mash it with the back of your spoon to ensure

A truly mashed consistency add grated garlic along with a splash of olive oil if the mixture starts to look dry after a few minutes add chopped tomato followed by Moroccan cumin and paprika I’ll include the exact recipe in the description below sprinkle in a little chopped parsley and chopped cilantro mix

And then splash in some Moroccan vinegar it’s one of those things that really makes it taste like it does in Morocco serve with crusty bread and enjoy like and follow for more and as always Paha and Bon
