The Ingredients:
500g, Squid
The filling:
200g, Pork Shoulder
100g, Shrimp
2 cloves, Garlic​
1/2 Shallot
1 tsp, Sugar
1 tsp, Fish Sauce
1 tbsp, Oyster Sauce
Black Peppers, to taste.
The Tomato Sauce:
Cooking Oil, for frying
50g, Onion
100g, Tomato
Salt and peppers.
Method:
1. Clean the squids and peel the skin. Chop the pork shoulder into small pieces. Chop the shrimp into small pieces. Chop the garlic and shallot into small pieces.
2. Make the filling. Place the pork, shrimp, garlic, shallot and season with sugar, fish sauce, oyster sauce and peppers. Massage all ingredients into the pork, using your hands. Set aside to let marinate for 10 to 15 minutes.
3. Using a piping bag, put some filling in each squid body, taking care not to overstuff. Using toothpicks, stab body squid, the filling not to overflow.
4. Simmer the stuffed squids for 10 minutes and set aside.
5. Make The Tomato Sauce. Heat the pan then add the oil. Add the onion and stir fry the onion until soft, about 1 minute. Then add the tomatoes and stir fry the tomatoes until tender, about 2 to 3 minute. Season with the salt and peppers.
6. Place the stuffed squid and simmer the stuffed squid for 20 to 30 minutes, done.
