Ingredients

  • 12 ounces whole onion or 11 ounces chopped, ready-cut onion (2 to 2 1/4 cups)
  • 1 teaspoon olive oil
  • 1 large clove garlic
  • 8 mushrooms
  • 4 ounces extra-lean ground beef
  • 4 ounces ground turkey breast
  • 6 large Italian, Greek or French olives
  • 2 cups canned, no-salt-added tomatoes
  • ½ cup bulgur (cracked wheat)
  • ¼ cup dry sherry
  • ½ teaspoon oregano
  • Salt to taste

Preparation

  1. Chop whole onion, and saute it in a nonstick skillet in hot oil until it begins to soften.
  2. Meanwhile, mince garlic and add to onion.
  3. Wash, dry and trim mushrooms. Dice.
  4. When onion has begun to soften, stir in ground beef and turkey and keep stirring to break up. Cook until meat loses its color.
  5. Rinse olives, pit and cut up. Crush tomatoes. Add olives, tomatoes, mushrooms, bulgur, sherry and oregano to pan. Reduce heat; cover and simmer about 10 minutes, until bulgur is cooked.
  6. When bulgur is cooked, season with salt, if desired, and pepper.
