Instead of sugar, these cookies are sweetened with dates and raisins, and the addition of carrots lends natural sweetness. Ingredients:
⚪️200g carrots
⚪️90g rolled oats
⚪️70g rice flour
⚪️60g almonds
⚪️30g raisins (dried cranberries or cherries)
⚪️70g dates (prunes or dried apricots)
⚪️1 tsp vanilla extract (optional)
⚪️1 tsp orange zest
⚪️1 tsp ground cinnamon
⚪️1/4 tsp ground cardamom
⚪️1/2 tsp ground nutmeg
⚪️60g coconut oil
⚪️1 tsp baking powder
⚪️1 tbsp lemon juice

Instructions:

1️⃣ Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
2️⃣ Wash the 200g of carrots, then finely chop them. Wash and finely chop 70g of dates. Soak and rinse 60g of almonds, then chop them.
3️⃣ In a mixing bowl, combine the grated carrots, chopped almonds, finely chopped dates, and all the other listed ingredients (rolled oats, rice flour, raisins, vanilla extract, orange zest, ground cinnamon, ground cardamom, ground nutmeg, coconut oil, baking powder, and lemon juice). Mix until well combined.
4️⃣ Scoop out about 1-2 tablespoons of the cookie dough and roll it into balls. Gently flatten the balls to shape the cookies (aiming for a thickness of 0.5-1 cm/0.2-0.4 inches). Place the shaped cookies onto the prepared baking sheet.
5️⃣ Optionally, top each cookie with a few chopped almonds.
6️⃣ Bake the cookies in the preheated oven for approximately 15 minutes or until golden brown around the edges.
7️⃣ Allow the cookies to cool on the baking sheet for 10 minutes before serving. Enjoy your wholesome carrot spice cookies!
