Lifestyle exactly yes thank you for having me back to continue to celebrate heart health month in February I’m here with boo sweet to talk about how sweet potatoes can enhance your heart health so it’s not just me a registered dietitian saying that sweet potatoes can enhance your heart health but the

American Heart Association also has this badge of honor they put on the boo site baked potato bag saying that it’s an American Heart Association certified heart healthy food I like that now I know we know sweet potatoes and baked tails for of course dinner but can they

Be used for other of course delicious dishes throughout the day exactly yes when I’m talking to my clients about how to include more sweet potatoes they’re usually thinking mainly but I wanted to highlight some ways to include them for breakfast and lunch um as well as snacks

So we’ll start with breakfast I have a breakfast baked potato um kind of like a loaded baked potato you would make for dinner with some you know traditionally I guess for dinner it be baked beans or guacamole salsa something like that for for breakfast you can do the same but I

Usually have the base as a Greek yogurt for some protein and then some fruit uh could be dried or fresh and uh my kids always love to top it with some chocolate chips too so you can have a little bit of fun with it I like that

All right that’s what do you have for us yeah then next I have a lunch so this is a sweet potato toast and the great thing about boset sweet potatoes are they’re super quick to make um all you have to do is put them in the microwave for

About 5 minutes and they’re cooked so you could do the same with the baked potato for breakfast and then what I did here was I just sliced that baked potato in like maybe a/4 inch thick slices so instead of the bread that we typically have for our toast we’re just going to

Substitute the bread out and substitute the sweet potato in and then you can just layer it with traditional toast topping so I have a Savory mozzarella tomato basil with balsamic vinegar as well as a trendy avocado toast and then another peanut butter and jam or peanut butter and

Fruits topped with some nuts and seeds so lots of different combinations but lot more heart healthy nutrients you have the fiber the pottassium the vitamin A it’s going to keep you full until dinner okay very quickly Veronica before we go to the next dish explain

Again do we toast the the baked po the potato the sweet potato or what do we do there yeah exactly you could do it two ways one is you can bake the baked potato in the microwave so you can put in the microwave for about 5 minutes and

Then slice it or you could put it on the stove top so slice it into that4 inch thick slices and then Grill it on the stove top so either way will work all right I like that and then yeah a salad everyone forgets do you enjoy it with

Salads exactly and I’m all about quick dishes so this all of these dishes actually come together within 20 minutes but um basically I throw in the green lentils into the insta pot at the same time as I’m m microwaving my baked potato for 5 minutes then you chop up

Some red onions some parsley some extra virgin olive oil and vineger for dressing and it comes together really quickly but it’s so delicious lots of fiber lots of heart healthy nutrients there that’s going to support your heart health in the long run I like that and and I think when people hear sweet

Potatoes they think okay it’s going to be very very sugary or very you know uh not good for you but not really it’s the other way around right exactly yeah I always think it as like an elevated white potato because you have all those extra nutrients that are making it
