This is a quick recipe where blueberries are cooked with sugar on low heat and flavoured with a hint of lemon. The compote is a perfect topping to stir into yogurt, mix into muffins, enjoy with French toast or spooned onto ice-cream.

Full ingredient list

2 cups frozen or fresh blueberries
1/2 cup sugar
1/2 cup water
8-10 frozen blueberries
2 tsp cornstarch mixed with 3 tablespoon water
1 tsp lemon juice

  1. An actual great how to video. The secret is in the reduction….if 15 mins is not enough (as it wasn't with mine) don't be to shy to leave it to reduce until it actually is half. Mine took closer to 40 mins. Might be because I had mine on a lower heat setting? Idk but no matter how long it takes do NOT take this off the heat to early. Great job. So easy and absolutely delicious. Served mine witg fresh bananas and whip cream over pound cake. Major hit in my home, even for my 2 very picky children
