Hello and welcome back we’re preparing a chickpea salad today it’s a quick meal that you can prepare in minutes so we start with peeling and dicing a cucumber into 1in cubes using half an onion peeled and thin the sliced to your desire next we have some Greek cheese

Which we will also dice up into small cubes feel free to use other options here like Feta halumi sheep cheese or tofu if you prepare a vegan option next we need to prepare the chickpeas fill a pot with water and bring that to the boil open the can and drain the brine

Add it to the pot and and season with some salt cook for about 8 to 10 minutes next you will notice that the chickpeas have an outer casing which I prefer to remove to do that I place the chickpeas into a large bowel of cold water mix and you will see the chickpea

Skin starting to float through the surface then just scoop them out once that is done strain the chickpeas and pet them dry on a paper towel and we can start assembling our salad adding our diced cucumbers the Greek cheese some sliced like camata olives sweet corn the sliced onions and the

Chickpeas next we’ll be preparing a simple dressing for the salad which is going to be a honey based vinegret all we need is three parts olive oil and one part balsamic vinegar and about a tablespoon of honey whisk everything together very vigorously and I mean vigorously until you get a very smooth

And thickened consistency back to our Bowl adding a dash of lemon juice and the vinegret that we just prepared mix everything together and we’re ready to Plate I added some sliced cherry tomatoes here but you could have added these with the rest of the ingredients in the bowel beforehand but since Elaine
