Broccoli and Potato Salad Recipe
Ingredients:
• Steamed or boiled broccoli
• 2 boiled potatoes
• 2 grated and sautéed carrots in olive oil
• 3 pickled cucumbers
• 4 tablespoons sweet corn
Ingredients for the dressing:
• 1 tablespoon dill and parsley, dried or fresh
• 2 cloves of grated garlic
• 6 tablespoons Greek yogurt or strained yogurt
• 2 tablespoons mayonnaise
• 1 teaspoon mustard sauce
• Salt and black pepper to taste
Instructions:
1. Mix steamed broccoli with boiled potatoes, grated and sautéed carrots in olive oil, chopped pickled cucumbers, and cooked sweet corn, then set aside.
2. For the dressing, mix 6 tablespoons of strained yogurt with 2 tablespoons of mayonnaise, 1 teaspoon of mustard sauce, 2 cloves of grated garlic, 1 tablespoon of chopped dill and parsley, salt, and black pepper to taste, then add to the salad and mix well. Enjoy!
