I’ve seen people calling this recipe ‘Potato Pancake’, but I don’t really like that name. I prefer to call it ‘Carlos’.

The idea is just to cook the potato, mash it, season it, and mix it with cornstarch until it reaches a consistency that you can mold with your hands.

There aren’t exact quantities because it will vary depending on the size and type of potato, and how much water is left when you drain it. But just keep mixing the cornstarch until it works.

The filling also depends on your imagination. I’ve seen many people using cheese, but I put in an eggplant caponata that I made the day before and it matched perfectly!
