Spices etc etc now one of the most important things it will be uh a pyramid that you probably have seen that and it’s very very simple and an easy way to follow it uh the simply starts from the bottom of the pyamid with the vegetables and fruits and things such as bread

Which is a tricky tricky part I will explain in a bit uh that starts on a daily uh basis and then you go move on to olive oil and good fats um or vegetable fats and then it goes up to the top of the pment which is

Meat and sweets that should be consumed once a week and there are things in between you can have a look yourself uh but we talk about it more on the first video now one thing that I said earlier it says Breads and uh grains on a daily

Bases now here that’s a thing I want you to think about um back in the day and the old times when they were were referring themselves to bread uh obviously they were talking about sourdough uh bread that they could make with what they had and fresh produce and

All that stuff anymore you see really cheap bread and white bread uh not only doesn’t do anything to your health it actually hurts it um so if you’re going to follow anything like that uh do not stuff your stomach with just uh bad bread let’s put it that way um if

You’re going to follow it you should do it properly otherwise don’t do it at all and just stay in vegetables and things you can actually uh have on your daily life um yeah just just an advice not to ruin your diet okay another information to pass on so today we’ll be talking

About uh most of the herbs that we use in the meteran region um most of them will be overlapping with uh spices cuz most of the spices come out of there the seeds of some herb so might have talked about it on the previous episode that was about

Spices but we use it as a herb from time to time depending on the the purpose cuz uh not only we were using at least in Greece and the other and the other actually countries not only we were using herbs for cooking but they play a really really important role on

The medicinal and phical um reasons so first and most important um at least around grae now in other countries they don’t use it as much however I think it’s the one that is most popular around my region around my country uh within the region that is oregano it can

Be used both dry or fresh uh slightly harder to find it fresh um worldwide so you probably going to you have probably come across uh as a DED it it belongs to the family of mints and you’re probably going to see it less in the southest countries like Egypt and

Have a really really hot climate then we’ll move on to Basil now basil you can find it in central Africa or Southeast sea or even worldwide now there are different varieties of basil and uh a really important one is the Greek basil that is slightly it has slightly smaller leaves

And it’s uh a bit more sweet in flavor uh it belongs to the family of mints and it’s used uh in most of the region now we will talk about spare me which is just another variety of meat which will talk separately uh later uh the reason

I’ve included this because even if it’s just a variety of mint uh is a it plays a very important role and is used in very lot of recipes is a su version of mint also referred as Garden Mint or lamb mint is native to Europe and Sou

The Eastern Asia then we move on to time time has varieties as well to the hottest countries and islands of the region in general is a shrub and it can be found in as a w as wild it has a distinct smell it has an important role

For medicines as well but is very important for food and especially for the Mediterranean Cuisine usually people tend to cut down uh the shrub time not completely remove the ground parts let’s put it way and then kind of uh rub it or use any um a metal object or something

To remove all the leaves carefully and then they will either dry it to preserve it and that way they can use it throughout the year then we’ve got Dill that is a anual herb into the celery family it stops can be uh used for decoration and they’re edible too most

Theine dining but in general is a boot too native to uh North Africa Iran and the Arabian Peninsula power however you can find it all over the world anymore and is uh really really interesting previously spoke uh we talked about spint but mint it has different varieties as

Well um that can be controlled so you can uh literally create variety of mint with other flavors it’s B best planted or uh the it’s at it at its freshest uh during spring so Mana is a genus of plants in the family of Mena Sage Sage or Salia of

Falis he belongs to the family of mint it’s an evergreen sub shrub uh with Rudy stems and blue to purplish uh flowers that are edible it’s to the Mediterranean region and uh it has a very very special flavor or distinct Aromas Savory uh quite aromatic used commonly worldwide and winter savory can

Be found with a more bitter flavor maram maram is uh quite popular and it can replace oregano as it belongs into the same family uh it’s not the same maram is slightly bitter but it’s nice as well it’s a cold sensitive perennial herb that usually replace Oran as we said in the colder

Countries um the under shrub has sweet Pines with citrusy flavors and it has important role for pharmacy and medicines next Rosemary it is also called Salvia rosarinos a shrub with fragrant Evergreen needle likee leaves and some beautiful edible flowers native deanan region lavender uh that makes such an amazing

Tea and infusions keep it in mind it’s part of the mint family quite aromatic and unique with bright and colorful flowers it can be found in most places around the world uh or it will be imported as a tried taragon it’s also called estron and it has a unique

Tasting into cooking now for today we don’t have the actual fresh um herbs with us um it would take a lot and um um into uh moving Flats actually so I’ll not be able to use them and I don’t want to waste them so we’ll see some of them

Dried and then I’ll provide some beautiful pictures just to get an idea uh now now the herbs we talked so far are about the whole region now Monro got some special ones that are not uh exactly herbs it’s like a mixture of herbs and that will be asak tea mainly

Made from buo root sep soil slipper bark and Turkish rarb and as the name suggest that makes te uh then we’ve got Gama Sylvester kees uh a perennial Hood Vine native to Asia Africa and Australia that can be used for medicine and cooking lastly we’ve got suup graviola

Leaves uh usually used for Infusion or to make Thea uh very common for medicine now additionally we’ve got some herbs that you will find them mostly like um spices rather than the plant which is cumin we talked about it in depth into the previous video that was uh uh the

Fundamentals of Mediterranean Cuisine spices so make sure you go click on it cuz there are a lot of details about it I don’t want to overlap it um and then we’ve got garlic garlic is the actual root of the herb but you got a top green

Part that can be used and you can also get fresh garlic um that makes a beautiful pesto but you can add it uh in different other recipes there are just so many of them uh then we’ve got tyes can find it throughout the region they have uh a

Little bit of uh onion like Flavor I would say or between onion and garlic flavor bay leaves okay this is an important one cuz you know how Bay Leafs uh we refer to them as a spice cuz usually is dried and preserved and sied uh worldwide you can find it everywhere

Uh but it plays such an important role throughout the region and surprisingly enough in Co countries like the UK in some places um or some areas over it you can actually grow the fresh plant and is um much stronger into Aromas and flavor but again you can find in most of

The stew and recipe and it’s just such an amazing one so lastly we’ve got a n plant um surprisingly enough is used throughout the region for drinks uh sometimes you will find it into desserts and Foods uh but it’s most common into drinks like uzo Rocky and there are different
