** INGREDIENTS **

2 cups cooking oil
2 pounds large shrimp
1 cup panko bread crumbs
1/2 cup flour
1/4 tsp salt
3 tbsp melted butter
2 eggs
1/2 cup chili sauce
1/2 tbsp orange marmalade
1/3 cup sweetened coconut flakes
1 cup unsweetened coconut flakes

** RECIPE **

Prepare shrimp:
Peel and devein shrimp
Add melted butter and pinch of salt and mix

Prepare dredging/breading station:
Start with flour and salt then mix
Then crack 2 eggs and beat
Prepare coconut flakes and mix with Panko bread crumbs

Mix orange marmalade and sweet chili sauce for dipping

Dredge shrimp on flour, eggs and coconut flake mix

Fry over medium to high heat for 5 minutes or until golden brown or desired crispiness
