It’s time for recipe of the day one of my favorite things to make on Monday is a big pot of soup because it’s comforting it just welcomes you home at the end of the day you know but also it’s so great to have for lunches on the
Days afterwards if you have leftovers to put them in a thermos to take with you or if you’re working from home you can just have a bowl of soup it’s really really great so the soup that I’m telling you about today is a quick Italian wedding soup now I wanted to
Know how Italian wedding soup got its name I assumed incorrectly that it was because it was something that was traditionally served at weddings it is not instead the name of the soup comes from the phrase minestra maritata which means married soup but it’s not referring to a marriage between people
Instead it’s referring to the way that green vegetables and meat go so well together in Perfect Harmony when you marry them they are delicious isn’t that lovely so this is one of my 15minute soups meaning that it’s ready from start to finish chopping and everything in under 15 minutes it’s perfect for a

That is by heating some broth or stock in the microwave you get out a big microwave safe Bowl you put the stock or broth into there and then you put it in the microwave for 5 or 6 minutes the reason for doing that is that the stock
Is now heating up out of sight while you get the other ingredients ready in your soup pot then when you’re ready to add the liquid to that it’s already hot and so you’re not waiting forever for that to come up to boil it really saves a lot
Of time so you’re going to start by putting four cups of chicken broth along with one cup of water into that large microwave safe Bowl the reason that I have the water in there is because the cartons of stock hold four cups and I don’t want you have to open an extra
Thing of stock to make the soup so you’re doing one four cup carton of stock and then one cup of water into the microwave safe bowl for 5 minutes now while that’s heating you get out your soup pot and you put it over medium heat with a tablespoon of olive oil and then
You peel and chop an onion add it to the pot now we’re going to be doing that same technique I’ve told you about before for making one ingredient quick meatballs and that is you use sausage links so you’re going to get some mild chicken Italian sausage links about five
Links and you just cut open the casing with a pair of scissors clean kitchen shears and then you use your fingers to squeeze out 3/4 in balls of that sausage meat give it a quick roll between your hands and just drop it straight into that pan with the onions now we’re not
Really trying to cook or even Brown these little sausage balls in there we’re just saving a step by putting them straight into there as we go so you just very quickly are plucking these little balls of sausage beet from the casings adding them to the pot with the onion
Try to kind of keep them in a single layer so they’re not touching each other they’re going to kind of stick together if they’re touching each other too much and you just keep doing that until you’re done with all five sausages discard the casings by now your broth
Mixture in the microwave should be nice and hot and you can just pour it over those sausage balls and onions into your pot give it a gentle stir and then increase the heat to high and put a lid on it you want that to come up to a
Simmer once it’s up to a simmer you’re going to add in 3/4 of a cup of some dry orzo or any other quick cooking pasta you just want a small shape that’s going to cook quickly in that broth so let that come up to a boil still over high
Heat and then reduce it down to kind of a nice bubbling simmer you want those noodles to cook in there and then you’re going to cook it until the orizo is al dante it’s going to be about 6 minutes while that is happening you can grate some Parmesan cheese if you didn’t buy
Already grated Parmesan cheese then test one of the noodles if it’s cooked by then the sausage will be cooked as well cuz those were small balls so now everything is cooked properly taste the broth add some salt if you’d like and then here’s what you do we’re doing a
Special trick to add spinach to this soup that’s our green vegetable for that beautiful harmonious marriage we’re going to be adding it to the soup bowls though and what that does is it just stops it from getting like two over cooked and mushy and it’s then not in
The soup so anytime you want to serve it you could just add some spinach what you do is you take your fresh baby spinach leaves and you put about a handful of them into a soup bowl and then you Ladle the hot soup over top it’s going to wilt
