Today I am making a delicious dish using many of the key flavors in Greek cooking – mint, parsley, feta, lemon, all delivering big flavors! These meatballs are juicy and the rice full of flavor. Adding that feta cheese makes this dish unforgettable!

Total Time:1 hour Serves: 4people
Ingredients
• ½ cup plain Panko Crumbs
• 2 tbsp milk
• ½ pound ground chicken
• ½ pound ground turkey
• ¼ cup finely chopped red onion
• 1 tsp finely chopped garlic
• 3 tablespoons finely chopped fresh Italian parsley
• 2 tablespoons finely chopped fresh mint
• 1 tsp Kosher salt
• 1 egg
• 2 tsp olive oil
• ½ cup uncooked white rice
• 1 cup chicken broth
• 2 teaspoons fresh lemon juice
• ½ cup halved cherry tomatoes
• ¼ cup crumbled feta cheese
• ½ tsp finely grated lemon zest

Directions
In medium bowl, mix Panko, milk, ground chicken and turkey, onion, garlic, 2 tablespoons of the parsley, the mint, salt and egg. Shape into meatballs. Using your Cast Iron skillet, heat 1 teaspoon of olive oil over medium heat. Cook meatballs 10 to 15 minutes, gently turning occasionally, until well browned on all sides. Transfer to plate.

Using the same pan, heat over medium heat. Add broth and lemon juice, scraping up the yummy bits from the pan and heat to simmering. Add rice; stir 1 minute. Add meatballs, DO NOT STIR. Cover and cook 15 minutes in a 375 degree over OR on low heat on the stovetop for 15 minutes.

And because we can…we add halved cherry tomatoes and lemon zest and feta cheese at the end to make it gorgeous!

Then we’re going to move on to the next step so these look pretty well mixed now you don’t have to use one of these you can just use use a Tablespoon Okay our meatballs are all in so what we’re going to do is I’m going to sprinkle them lightly with salt and pepper then I’m going to put a lid on them and then we’re going to let them cook for a little bit then we’re going

To turn them and let them cook a little bit and turn them until they’re nice and golden and done so takes about 15 Minutes our meatballs are beautiful what I’m going to do is I am going to move these all out into a bowl once that’s all out I’m going to take my chicken broth my lemon juice and what we’re going to do is we’re going to kind of De glaze the pan and get all

Those yum bits from the bottom okay so we are going to bring our liquids here up to a boil and then I’m going to pour my rice in and then we’re going to carefully lay our meatballs all back on top of the rice we’re going to

Cover it up and put it in the oven and let it continue to bake until till the rice is all done and then we’ll see what we’ve got all right we are boiling so we’re going to stir this in okay all right now the the trick here is

We’re not going to stir it so now that the meatballs are on the rice it doesn’t get stirred so we’re going to turn it off I’m going to cover it up put it in the oven and I will see you back here at the counter one thing if you don’t have a
