    I am very sorry but when I first saw this I thought it was an attempt to make a lunchable look fancy. I am not saying this to poke fun- just to give that feedback.

    The mille feuille itself is really fun and whimsical. All of the components sound delicious. The rest of the presentation feels too serious for how adorable the mille feuille is. I’m not a pro so BIG grain of salt, but restructuring to lean in to the whimsy would be awesome.

    The plate itself isn’t doing you many favors – to me it looks a little wan and colorless with just that plain white plate.

    as someone has said: mille feuille, by definition, should be puff pastry. it means “thousand sheets,” referring to the layers of pastry.

    I’m not sure what to call this dessert, since I think “napoleon” is also supposed to be puff, but it may be the case that the term has expanded to include other stacked cookie/cream dealies; maybe someone else knows more.

    that said, I think it’s cute! and I love grapefruit anything. plating could use some tightening up, but I like that it looks like it could be a cartoon.
