Homemade Caesar Dressing

I’ll never stop talking about it because it’s PACKED with nutrients and makes me want to eat more vegetables.

Anchovies are chock full of DHA & EPA, 2 types of Omega-3 fatty acids. They also contain selenium, protein, B3, B12, Iron, and calcium.

I ate Caesar salads all throughout my pregnancies as a way to get in more nutrients and veggies and I liked being able to control the ingredients versus store bought dressings.

Here’s what you need:
-1 can anchovies in olive oil
-1 egg
-1 cup avocado oil
-Juice from 1/2 lemon
-1 tsp minced garlic
-1 Tbsp Dijon mustard
-1 Tbsp red wine vinegar
-1 tsp salt
-1/2 tsp black pepper

Preparation:
-Blend 1/2 cup of the avocado oil with the egg until it’s emulsified. Add the other 1/2 cup and blend.
-Add all the other ingredients and blend.
-Label and store in the fridge for a week. Enjoy with romaine lettuce or for dipping veggies!
