We are making an easy puff pastry recipe. Our ASPARAGUS, TOMATO & SPINACH BREAKFAST TART is packed with vegetables and has loads of flavor. This nutritious breakfast saves time because it is made with store-bought puff pastry. Just roll it out and add cheese, seasoning and veggies. In a little over 20 minutes, you will have a healthy breakfast without eggs. To make this a vegan meal, substitute cheese with vegan cheese.

ASPARAGUS, TOMATO & SPINACH BREAKFAST TART
3/4 – 1 cup Parmesan Reggiano cheese, grated & divided
1 ready-made puff pastry, thawed, if frozen
granulated garlic, to taste
red pepper flakes, to taste
fresh thyme, to taste
Mozzarella cheese pearls, to taste
1/4 cup fresh spinach, roughly chopped
1 small tomato, thinly sliced & placed on a plate lined with paper towels (see NOTES)
3 – 4 pieces of thick asparagus, ends trimmed & sliced in half, lengthwise (see NOTES)
salt, to taste
freshly ground black pepper, to taste
1/2 – 1 Tbsp milk
fresh basil, roughly chopped, for garnish

1. Preheat oven to 400°F. Line a baking sheet with parchment paper (see NOTES). Set aside. Roll out puff pastry. Cut pastry into a circle by placing a plate or a bowl over it and cutting pastry with a paring knife. Take a smaller plate or a smaller bowl and lightly press it into pastry. Fold edge of pastry over onto itself using the pressed plate’s indention mark as a guide. Press edge of crust into pastry.
2. Sprinkle half of Parmesan cheese onto pastry up to the crust. Season with granulated garlic, red pepper flakes and thyme. Evenly distribute mozzarella pearls onto pastry. Sprinkle on spinach and more Parmesan. Top with tomato. Place mozzarella pearls on tomato slices. Sprinkle on more Parmesan cheese. Add asparagus. Season with salt, pepper and more red pepper flakes. Brush pastry crust with a light coat of milk.
3. Bake 18 – 22 minutes, or until golden. Garnish with fresh basil and more Parmesan Reggiano cheese. Serve warm.

NOTES
1. Tomatoes are placed on paper towels before placing on puff pastry to absorb some of the water the hold.
2. If you can’t get thick asparagus, use thin ones. Just remove the ends and place them onto the pastry whole.
3. Some store-bought puff pastry sheets come with oven safe parchment paper. Check the packaging to see if the puff pastry that you purchased uses oven safe parchment paper.

This is a great meal for breakfast or brunch. Also, if you cut it into smaller slices, you can serve it as an appetizer. Not to mention, it is the perfect meal to eat if you are looking to cook an eggless breakfast.
