Hello my friends we are smack dab in the middle of my favorite season what season is that you ask soup season and if you’re anything like me this is one of your favorite Seasons as well although it’s like 70° here in Southwest Florida but I haven’t had to turn my air

Conditioning on in a month and a half so there is that and in this episode I’m going to teach you how to make one of Olive Garden’s most beloved and popular soups the chicken and Yoki soup and if you’ve never had this delicious soup before it’s a creamy soup with roasted

Chicken fresh spinach celery match stick carrots and onion and little potato noi and we are going to make the homemade nooki using powdered potatoes now before anybody stubs their toe running to the comments to tell me that I don’t know what I’m doing or that I’m wrong just

Trust the process on this I personally have never found a readymade or store-bought nooki that was worth anything and even for the most seasoned and experienced home Cooks homemade nooki can be very timec consuming and inconsistent in its results so trust me on this you’re going to love it but if

You still think that I’m wrong after I show you how to do it and if you’re lucky enough to have your grandmother’s famous noi recipe and you’d rather do that than by all means feel free and we’re going to get into this amazing soup right now but first I want to give

Go ahead and Pat myself on the back for a second because roasted chicken is kind of one of my specialties and then of course I always make a homemade chicken stock afterwards if I stood around waiting for other people to compliment me I’d be waiting a while so I figure I

Might as well just compliment myself right so in a very large mixing bowl you want to add two cups of the powdered potatoes add three pinches of kosher salt and A4 of a teaspoon of freshly ground nutmeg in my opinion creamy soups and fresh nutmeg go hand in hand the

Flavor profiles together are Perfection and in fact we’re going to add add a little of the fresh nutmeg to the soup itself but we’re going to start by adding it into the potato just to give these Noki a little extra punch and now you want to add two cups of boiling

Water to the potato flakes so it’s equal parts 2 cups of water two cups of potato flakes and to this mixture add the yolk of two eggs now sprinkle in one cup of allpurpose flour and now stir this until well Incorporated now take this mixture and knead it on a flowed surface for

About 1 minute with flowed hands you want to take one teaspoon of the potato mixture roll roll it into a little ball place it on some wax paper and give it a little Thum print if your potato mixture is too wet and sticking to your flowed

Hands then just roll it in some more flour in a saucepan with 2 in of simmering and salted water gently drop each noi into the simmering water once the noi float to the top using a kitchen spider or a slotted spoon remove the noi and set aside to drain pull and chop the

Meat from a freshly roasted chicken if you use an average sized bird of 4 1/2 lb it should yield about 4 cups of pulled and roasted chicken and make sure to use both the white meat and the dark meat and don’t forget to save your wishbone for making wishes now finally

Dice one small sweet onion three large and very crisp celery stocks sliced thinly on the bias or diagonally three large garlic cloves minced and 8 oz of fresh baby spinach chopped in your Soup pot and on a medium high heat add 2 tbspoon of extra virgin olive oil once

Briskly to ensure that the r has completely Incorporated Now cover and simmer for 10 minutes once your soup has been simmering for 10 minutes and the vegetables are nice and tender add in your chopped chicken your chopped spinach two cups of heavy cream hit it with some kosher salt some cracked black

Pepper and 1/4 of a teaspoon of ground nutmeg give it a stir cover and simmer for 5 more minutes turn the heat down to medium and gently add in your potato dumplings or your noi and allow the noi to naturally thicken the soup simmering for an additional 3 to 4 minutes I know

What you’re thinking this makes a ton of soup but in the catering industry they say come heavy or stay home right come heavy or stay home it’s a motto I live by and you know what the soup freezes really easily as well and yes that is homemade
