Mushroom risotto

Ingredients:
🔸mushrooms (500 g)
🔸garlic gloves (3 pieces)
🔸onion (1 big piece)
🔸rice Arborio (300 g)
🔸salt/ ground pepper/ sprig of rosemary/saffron
🔸white wine (120 g)
🔸chicken broth (or vegetable broth)
🔸grated parmesan
🔸olive oil
🔸parsley

1. Warm broth over low heat in a small saucepan .
2. Peel off mushrooms, then cut and fry all of them in a skillet over high heat. Add salt and pepper. Remove mushroom mixture from pan and set aside.
3. Mince garlic and add it to a heavy skillet with olive oil.
4. Dice onion and add it to garlic. Throw a sprig of rosemary to the skillet.
5. Add rice and stir it all together.
6. Add white wine to rice stirring constantly until liquid is absorbed.
7. Add 3/4 of broth to rice and stir until almost all broth is absorbed. Add saffron, salt.
8. Continuing adding broth that left and stir until liquid is almost absorbed.
9. Decorate with fresh parsley, season with pepper and grate some parmesan. Add olive oil before serving.
