Hi guys it’s alyssa from simply quinoa and welcome back to my channel today i am going to show you how to make the most amazing vegan blueberry pancakes in the entire world these happen to be super fluffy made with really healthy whole grain flours and i know you are

Just going to love them so let’s go ahead and see how to make them to start this recipe we’re going to make two flax eggs by combining flax seed meal with some water in a measuring cup or bowl and stirring it together and then setting it aside to let it gel in a

Separate bowl you’re going to combine quinoa flour almond flour some coconut flour arrowroot starch baking powder and salt and then you’ll just whisk that together until everything is evenly combined once the flaxseed meal has had some time to gel you’re going to add in your non-dairy milk along with some oil I’m

Using almond oil here but you could use coconut oil or anything that you like along with some pure maple syrup for a little bit of sweetness and then just whisk that together until it’s smooth next you’ll pour the liquid ingredients into the dry ingredients and then you’ll

Just stir together like you would any traditional pancake batter the thing that’s great about gluten free pancakes is that you don’t have to worry about the lumps because there’s no gluten so the batter will not get tough I just really stir them until they get smooth

But you can see that the batter is still nice and thick and then I add in my fresh blueberries and then I just fold them together and make sure that they’re evenly distributed throughout the whole batter so every pancake has some blueberries to cook you’re going to heat a nonstick skillet

Or griddle over medium heat and then you’re going to add a quarter cup of batter onto the griddle for each pancake I had room to fit for and then you’ll cook them until they start to get bubbly around the edges about two minutes or so

And then you can just flip them over and you’ll see they’re nice and golden-brown and then just clip them for another minute or so they’ll get a little bit fluffy and you’ll be ready to serve so to serve you’re just going to stack all of your pancakes I like to have big tall

Stacks of pancakes and then I just add on some fresh fruit I use blueberries in this case but you could use anything that you’d like and then of course the best part is pure maple syrup nice big drizzle of that and then it’s just time to dig in and enjoying a big

  9. I just tried these… Changed a couple of things but for the most part stayed true to the recipe and I loved them! It’s been difficult finding a pancake recipe that is much healthier than the norm and still tastes good with a good texture. I just so happen to have almost every ingredient in my house so, it worked out. Thank you!

    Btw, I subbed:
    – almond flour for oat flour
    – arrowroot powder for tapioca starch
    – maple syrup for honey
    – and I used 2 eggs instead of flax eggs
    – and I added vanilla extract

    I don’t consider myself a vegan but I do make a lot of vegan meals. I just wanted to try these more vegetarian first since I had a couple of eggs on hand anyway. Worked out great.
