We’re back in the kitchen baking up a yummy batch of vegan funfetti Christmas cupcakes. This recipe is super quick, super fun, and yummy! We hope that you try it and enjoy it with your family this holiday season!🎄✨

Vegan Vanilla Funfetti Cupcakes

Ingredients:

Cupcakes
1 1/2 cups all-purpose flour
3/4 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup non dairy milk
1/3 cup neutral oil (e.g. Avocado, canola, etc)
1 tbsp distilled white vinegar or apple cider vinegar
2 tsp Vanilla Extract

Vegan Buttercream
1/2 cup Spectrum Organic Shortening
1 teaspoon vanilla extract
3 cups powdered sugar

Instructions:

Cupcakes

Preheat the oven to 350°F. Prepare a standard sized cupcake/muffin baking tray with paper cupcake liners.
Sift the flour, sugar, baking powder, baking soda, and salt in a large bowl.
Whisk to blend thoroughly.
In a measuring cup or bowl, whisk together the vegan eggnog, oil, vinegar and vanilla extract.
Pour the liquid ingredients into the dry, and mix with a whisk just until combined. Do not over mix.
With a medium icecream scoop or large spoon, fill the paper liners about 2/3 full with the cupcake batter. Bake for 18-22 minutes, or until a toothpick inserted comes out clean or with a few cooked crumbs. Cool the bases in the tray for 5-10 minutes, then gently transfer each cupcake to a cooling rack. Let cupcakes cool completely before frosting or the frosting will melt.

Vegan Buttercream

In a mixing bowl, beat Spectrum Organic Shortening until creamy. Add vanilla extract and continue to beat until well combined. Gradually add powdered sugar, one cup at a time, beating well after each addition. Pour in oat milk and beat the mixture until smooth and fluffy. Adjust consistency by adding more powdered sugar if needed. Pipe onto cupcakes and enjoy your delicious vegan treat!

Hey you guys welcome back to our holiday baking Series today we are doing something for those of us who don’t really like to eat dairy am I vegan no but sometimes I am and so sometimes I like to have something without dairy right yeah all right so tonight we are doing a

Christmas theme vegan vanilla cupcake so we’re going to get right into this recipe yeah okay so in this bowl I already have our dry ingredients which is 1 and 1/2 cup of flour just allpurpose flour and then I have one teaspoon of baking powder a/ teaspoon of

Baking soda and then a/ teaspoon of salt so the only thing that’s missing right now is the sugar and so for the sugar you’re going to do 34 cups we are going to add that right to our dry ingredients that’s it for the dry ingredients so

We’re going to put that to the side and then we’re going to work on our wet ingredients our wet ingredients is any type of non-dairy milk right I’m using oatly oat milk but you can use any non-dairy milk I choose oat oat milk because it has less allergens and so if

You have someone that’s allergic to Soy or tree nuts oat milk probably be a good alternative and so we need one cup and I’m just going to eyeball well this is a one cup measure measuring cup so I really don’t have to eyeball it but okay

So that’s what we have in there and then we need we’re making a vegan buttermilk that’s really what we’re doing right here and so we have some apple cider vinegar but you can use regular vinegar as well you can use white vinegar so if you have white vinegar you can use that

Smell it no doesn’t smell good does it no okay I don’t need to smell I know what it smell like I don’t know does not smell good vinegar is yucky all right so we’re going to put that one tablespoon of vinegar into our oat milk and then

Now this this gu you want to try some want to taste it why not now to our vegan buttermilk we are going to add two tablespoons of vanilla so that is what’s going in now this is just a basic vegan vanilla recipe and it’s like something that you can tweak

To make like lemon like I use this recipe to make vegan lemon cupcakes so it’s very versatile once you get a base recipe you should be good to go so we’re going to let this sit for a second in because you need that um oat milk and

The vinegar to kind of activate Holy Spirit activate activate activate Holy Spirit activate activate Okay so now we’re going to just whisk the um dry ingredients do you want to do you want to whisk it as you’re whisking I am going to go ahead and add the wet ingredient

Now we just need A3 cup of oil I’m going to pour that in and that is it if yours look like that then you’re all set you are all set so now I think because we’re making Christmas cupcakes we should make them Funfetti right yeah yeah okay fun

Sprinkles yeah we should add some sprinkles right so let’s add a little bit of sprinkles to make this a Christmas Funfetti here you want to do it it’s like it’s like a perfect treat it’s like the perfect treat for Christmas perfect treat for Christmas absolutely there we go now that we have

That all mixed together we’ve Incorporated our sprinkles to make this a vegan Funfetti we are going to add it to our baking pan I like making I like making vegan cupcake better than regular cupcakes because they’re so quick to come together and then there’s no eggs there’s no butter

So I like to make them better our oven is preheated to 350 and we’re just going to go ahead And add our batter cupcakes are in the oven we are going to start on our vegan buttercream we are using we’re actually using shortening I like to use shortening because you can avoid allergens with this so I use the Spectrum culinary organic shortening and but you can use a

Vegan butter I like to avoid vegan Butters because usually they have some type of nut in them or they’re salty and I can’t control the salt content and I don’t like that and so we’re going to use the shortening so we’re going to use a half

A cup of shortening half a cup half a cup of shortening we’ll say it again just in case you C it half a cup of [Applause] shorty and the recipe for this will be in the description box so if you forget even after we said it four times half a cup of

Shortening it will be in the description box okay so we have that and then now we are going to to put in just a pinch of salt we’re going to do one tabl one teaspoon of vanilla going inoon yes and then we have four cups of

Powdered sugar sugar um you just want to make sure that it is made with um cane sugar okay and if you need some recommendations I can definitely link some down below so I like to use my sand mixer for this but um I want to show you

A way to do it if you don’t have a sand mixer So today we’re going to do it with a hand mixer so we’re going to mix this for about 5 minutes because I like a real fluffy butter buttercream I’m going to go ahead and add some of the oat milk

Because we do need some type of liquid and so I am adding um about 2 tbspoon of the oat milk all right so our cupcakes are out of the oven and they are on the rack cooling rack cooling down and then we will decorate them all right so our cupcakes are

Cooled down and out of the oven so we’re just going to go ahead and pipe we’re going to pipe our cupcakes and then we’re going to decorate them then we’re going to eat them and then this video will be over all right so um so what is your favorite what’s your
