It is specifically a Creole/Cajun dish not a dish from cooks of all backgrounds. Black folk in Louisiana have been eating Gumbo for over a century.
I grew up hearing my mom say “I’m not cooking thanksgiving food nor eating thanksgiving food for Christmas” 😂
