Happy holidays! It’s a Reuben, but instead of sauerkraut, it’s kimchi!

Ingredients:
– 2 slices of sourdough
– 3 tbsp butter
– 4 oz Boar’s Head corned beef
– 2 slices of Swiss cheese
– 4 oz kimchi
– 1.5 oz Thousand Island dressing

Recipe:
1. Toast both sides of sourdough with 2 tbsp butter.
2. Caramelize the kimchi for 5 min in 1/2 tbsp butter.
3. Heat the corned beef in 1/2 tbsp butter for 5 min.
4. Top the corned beef with Swiss cheese & cover for 1 min.
5. Spread both slices of sourdough with Thousand Island dressing & layer with corned beef with Swiss cheese, kimchi, & top slice.
6. Enjoy!
