Ida calls her pasta ‘maccaruni cui feri’ while in Italian it’s maccheroni, but however you want to call them, these hand rolled macaroni shapes are fun to make, and are delicious served with freshly foraged porcini mushrooms. You can of course use ordinary mushrooms. This dish is vegan up to the point you add optional cheese at the end. Here are the ingredients:
for the pasta: 200g 00 flour, 200g semola rimacinata, 200ml of water.
for the sauce: 500g diced mushrooms, 1 garlic clove, 500g bottled, tinned or fresh tomatoes, handful basil leaves, salt, extra virgin olive oil

Which she adds whole and will remove before serving she Seasons the mushrooms with salt they need several minutes to fry in the olive Oil should make this is a jar of eda’s bottled Tomatoes she Scoops in around half a jar for this sauce chunks are better than Pata AA likes to freeze her Basel for use in the winter months she pours in a little water and leaves the mixture to
Simmer to make her macaroon Eda cuts off a chunk of pasta and pulls pieces off it which she rolls to form short cylinders about 7 cm long she places her Pharaoh or iron Rod along the pasta bullet and rolls it briskly under flat Palms her Pharaoh was an umbrella spoke
And the bent nature of it actually helps to stop the pasta from sticking there is a yearly Saga or food festival in August when everyone in the village makes macaroon in the morning of the event you can hear the clacking of the rods in the [Applause]

A simple dish, but with pasta and porchini that fresh, you could serve it to a king…I'm glad the neighbours there are friends, that's how a village is meant to work. I wonder what they did with the giant pumpkins…

Whenever I make "maccarruni" I see the hands of my great grandmother rolling dough on Sunday mornings.

As much as I love every granny in this series, Iβm equally in love with their beautiful kitchens. They may not be the most modern, although most have all the convenience items you could ever want, they are full of character and made to last, just like the grannies themselves. It is so different than the all white and stainless steel popular in my part of the US right now, and Iβm so glad. Everyone is different though, so you should have whatever makes you happy in the kitchen.

Ohhh, how wonderful to have access to fresh porcini. I forage for mushrooms from time to time with a knowledgeable friend, and we do sometimes find porcini, but they are fairly rare here. So delicious.

It's incredible to see the difference in local ingredients like olive oil. When you buy it in Canada, you know what country it comes from. When you buy it in Italy, you know the exact village. I bet it smells amazing.

My mother would have thoroughly enjoyed these videos. How I wish she was here to watch them with me! She told me how her mother made pasta so quickly and easily and always made enough to share with neighbors. That was here in America. My grandmother came here when she was a young married woman, leaving her family in Italy.
