Cherry tomato pasta is a simple dish for any day of the week which calls for the freshest, juiciest organic cherry tomatoes you can find. Once you add aromatic basil to create the perfect pairing plus a scoop full of mascarpone cheese it will be even creamier than you had imagined – without the cream of course! Try this twist on neapolitan cherry tomato pasta and don’t go past the extra dash of pecorino cheese which really makes the flavours sing on a plate!

This is a cherry tomato pasta with a special ingredient of mine to make it nice and creamy get those cherry tomatoes off the wine and then we cut them enough we’re gonna add a generous amount of extra virgin olive oil put the cherry tomatoes in okay we put the garlic in there

Stir so now the tomatoes are in there and we’re going to boil our pasta just press on top of them so you help the juice to get out faster we’re going to add salt and pepper half a mug of pasta water and we’re gonna put it in this mix

We are now going to add fresh basil stir the pasta is nice ready al dente and now we’re gonna put in there we mix it the mascarpone a touch of pasta water we stir until the mascarpone melts we put the pecorino in there stir more basil raw extra virgin olive oil

  2. Got some fresh cherry tomatoes, but only had parsely and crème fraîche in the fridge…also delicious!! Thanks for providing inspiration!!!

  3. Been trying loads of different cherry tomato sauce recipes, but always come back to this one. I do pass the tomatoes through a foodmill at the end, to remove the skins, as some family members have trouble digesting them. And we each seperately add some chilli flakes, or Nduja paste, whatever we have on hand. I love just that hint of heat in the background.
