In this recipe I will show you how to make a crunchy cucumber salad that is great as a side dish, snack or as a condiment. It is healthy, tasty and delicious.

Ingredients:
1 large English cucumber
2 cloves garlic
½ cup red onion
1 ½ tsp. gochugaru (Korean red pepper flakes)
1 ½ tsp. toasted sesame seeds
1 ¾ tsp. salt
1 tbsp. soy sauce
1 tbsp. rice wine vinegar
1 tbsp. sesame oil

Directions:
Wash and cut cucumber into halfmoons.
Thinly slice red onion.
Place cucumber and onion in separate bowls.
Add 1 ½ tsp. salt to cucumber and let it rest for 20 minutes.
Add ¼ tsp. salt to onion and let it rest for 20 minutes.
Mince garlic and add to bowl.
Add vinegar, sesame oil, sesame seeds, gochugaru, soy sauce and mix to combine.
After 20 minutes, thoroughly rinse cucumber and onion in cold water.
Pat dry with clean towel then place in a bowl.
Add sauce and mix to combine.
Serve and enjoy.
