260g/9oz of Italian 00 flour, plus more for dusting
2 whole eggs + 3 egg yolks

For the sauce:
100g/3 ½ butter
125g/4 ½ Grated parmesan
juice of half a lemon
Freshly ground black pepper optional
truffle shaved or grated

Roll it to roll my pasta dough I’ll be using matella rolling pin it’s good way to practice and I’m finding it very relaxing feel free to use pasta machine or kitchen a attachment to roll your Dough if you decide to hand cut your pasta first of all dust it heavily with semolina or rice flow next fold the all multiple times as you see above finally cut the tag with the knife or if you’re using pasta machine use the cutter attachment well done you have made

Beautiful pasta next let’s start preparing the sauce bring a large pot of water to the bow before seasoning with generous amount of salt the saucepan over the pot add Ladle full of water and butter create butter emotion finally drop the pasta to Boiling salted water and cook

For 1 to 2 minutes then transfer it to the butter sauce mix it all together before adding the generous amount of Parmesan mix it again and add more pasta cooking water if needed placing a saucepan over a pot of boiling water use direct heat which will help you create

Silky sauce and not a strin cheese season to tast with sea salt and lemon juice plate it straight away don’t forget to scoop all this lovely sauce from the pan and finally finish the dish with gratings or shavings of black travles enjoy

  3. Wow! That looks delicious. And I noticed that your hands move back and forth on the rolling pin as you were rolling out the pasta dough. I don't think I've seen that done before. Also watching you make pasta is very relaxing. There was a video that I watched where someone said they were told there's a dish in Italy that has pasta, potatoes and green beans. Have you heard of or made that before? I thought of it earlier when I watched your video where you made ravioli in the shape of a flower. But the filling was made with potatoes and zucchini. I meant to ask this question in the comments then. It made me wonder what other kinds of filling can you put in ravioli? That was such a beautiful dish. It was like edible art.
