In today’s video, I will show you how to make Minestrone, a hearty and delicious vegetable soup. Serves 4-6 people.
Ingredients:
2 large garlic cloves, diced
1 large white onion, chopped
a handful of parsley, chopped
6 large carrots, sliced
4 celery stalks, sliced
4 large potatoes, cubed
100g baby spinach
250g cooked chick peas
200g tomato sauce
500g lean ground beef (or veal)
3 tbsp. evoo
1/2 c. (120ml) white wine
1 chicken bouillon cube
4 c. (920ml) filtered water
(or 4 c. chicken broth without bouillon cube)
salt & pepper to taste
1/2 tsp. dried basil
1/2 tsp. dried thyme
1/2 tsp. red pepper flakes
2 rosemary sprigs
2 bay leaves
grated parmesan cheese, parsley, evoo for serving

Procedure:
1. Dice garlic, chop onion.
2. Turn heat on to medium, add 3 tbsp of evoo to a large, deep skillet. Add the diced garlic and chopped onion. Add some salt to taste and saute for 5 minutes.
3. Add the ground meat. Break it up into bits with a wooden spatula as it cooks. Add salt and black pepper to taste. Once the meat browns, pour in the white wine. Saute for 20 minutes, stirring occasionally.
4. In the meantime, cut the carrots, celery and potatoes. Chop the parsley.
5. Add the vegetables, tomato sauce and chicken bouillon cube to the meat. Pour in the water and stir. If you prefer, you can add chicken broth instead.
6. Throw in the spinach.
7. Add the dried basil, thyme, red pepper flakes, rosemary sprigs and bay leaves. Stir, cover and cook for 40 minutes over medium-low heat. Stir occasionally.
8. Taste if more salt is needed.
9. After 40 minutes, once the vegetables are cooked, stir in the cooked chick peas.
*You can also add beans or small cooked pasta to this recipe.
10. Plate and serve with grated parmesan cheese, parsley and a drizzle of evoo.
