Recipes :

Manchow Soup
Preparation time: 5min
Cooking time: 5min
Serves: 4

Ingredients:
1 cup fried noodles
Oil For Frying
For Soup
2 tbsp Oil
2 tsp Ginger, chopped
2 tsp Garlic, chopped
2 tbsp Onion, chopped
2 tbsp Beans, chopped
2 tbsp Carrots, chopped
2 tbsp Mushrooms, chopped
4 tbsp Cabbage, shredded
2 tsp Soya sauce
1 tsp chili sauce
2 tsp Vinegar
Salt to taste
Pepper to taste
1 tbsp corn starch
Spring onions to garnish
Method:
Heat a pan and add oil. Add ginger and garlic and give a quick stir. Add onions and stir for 30 secs. Now add beans, carrots, mushrooms and cabbage and sauté on high heat for a minute. Add soya sauce, vinegar, chilli sauce, salt & pepper.
Stir for another minute. Pour 2 cups of water and let it come to a boil. Meanwhile mix I tbsp of corn starch with 5 tbsp of water. Once the soup gets a good boil pour the corn starch while continuously stirring. Cook it the soup thickens. Add freshly chopped spring onions.
In a bowl pour out the soup and garnish with a generous helping of fried noodles.

Broccoli & White Chocolate Soup
Preparation time: 5min
Cooking time: 5min
Serves: 4

Ingredients:
2 tablespoons butter
1tablespoon flour
1 onion, chopped
250ml stock
250g broccoli florets
200ml milk
150g white chocolate, grated
salt and ground black pepper to taste
Method:
Melt 1 tablespoon butter in a pot, and saute onion until tender.
Add broccoli and stock, cover and simmer for 10 minutes. Puree soup and set aside.
In small saucepan, over medium-heat melt 1 tablespoons butter, stir in flour and add saute till fragrant. Add in the milk. Stir until thick and bubbly, and add to broccoli soup.
Add in the white chocolate and heat gently to bring to a simmer.
Season with salt and pepper and serve.

Corn Soup
Preparation time: 5min
Cooking time: 5min
Serves: 4

Ingredients:
½ onion chopped
2 tablespoons butter
2 cloves garlic minced
1 tablespoon flour
2 cups corn kernels
1 large potato peeled and ½” diced
3 cups vegetable broth
1 cup light or milk
salt & pepper each
Spring onions for garnish sliced
½ tsp oregano
Method:
Combine onion, butter, and garlic in a saucepan. Cook over medium heat until onion softens, about 4 minutes.
Add flour and oregano. Cook 1 minute more. Stir in corn and potatoes.
Add broth, cream, salt, and pepper. Simmer 15-20 minutes uncovered or until potatoes are tender.
Garnish with chives and serve warm.

Tomato Soup
Preparation time: 5min
Cooking time: 5min
Serves: 4

Ingredients:
1 tsp butter
½ onion, finely chopped
2 clove garlic
8 tomato, chopped
1 carrot, chopped
Salt to taste
½ beet root
1 cup water
½ tsp pepper, crushed
2 tbsp cream

Method:
Heat 1 tsp butter in a pan. Add the onion and garlic and sauté till translucent. Add the tomatoes, carrots and beetroot and pressure cook for 2 whistles with 2 cup water.
Sdd 3 tomato, ½ carrot chopped and ½ tsp salt.
Saute for a minute or till tomatoes change colour.
Cool the mixture. Blend to smooth paste without adding any water.
Now sieve the tomato paste discarding the residue.
Add ½ cup water or more adjusting consistency.
Get the soup to a boil and add salt pepper to taste, basil leaves and cook for a few minutes.
Finally serve tomato soup garnished with cream and croutons.

Cream of Mushroom Soup
Preparation time: 5min
Cooking time: 5min
Serves: 4

Ingredients:
200g sliced fresh mushrooms
2 cups veg stock
½ cup chopped onion
1 sprig thyme
1 tablespoons butter
1 tablespoons all-purpose flour
Salt to taste
½ tsp black pepper
½ cup cream
1 cup milk
Method:
Heat butter in a pan. add the chopped garlic and then sauté for 2 minutes. Add the chopped onions and saute till translucent. Add mushrooms and saute till the mushrooms are Simmer mushrooms, broth, onion, and stock in a large heavy saucepan until vegetables are tender, 10 to 15 minutes.
Blend the soup with milk until creamy but still with some chunks of vegetable. Melt butter in the same saucepan. Whisk in flour until smooth. Whisk in salt and pepper. Slowly whisk in milk and- mushroom mixture.

So if you want to make it for more people or for less people, you can adjust this recipe accordingly. This is done. Now what will we do? We will roughly chop a big carrot and keep it. Now let’s take a pressure cooker.

And in this pressure cooker, we will take 1 spoon of butter first. Now we will add 1 cup of finely chopped onion to it. And we will make it a little pink. We will roast the onion for 2 minutes. After that, we will add these carrots to it.

And we will also cook these carrots with it for 2 minutes. Now to improve the nutrition and color of my soup, I have cut it in half. I have kept it in fine slices like this. I will also add this to it. Now cook it for only 2 to 3 minutes.

So that the raw onion aroma goes away suddenly. You start getting the aroma of cooked carrot and cooked onion. Now we will add these chopped tomatoes to it. 1 spoon of salt. Half a cup of water. And we will pressure cook it until 3 whistles come.

After 3 whistles, when you open your pressure cooker, you will see that these tomatoes are cooked well. Carrots, tomatoes, everything is cooked. Now we will cool it down a little. And we will put it in a mixer and make a fine puree of it. Did you see?

It has got such a nice color. We didn’t have to add any artificial color to it. Nor did we have to add any sugar to it. To balance the sourness of the tomato. Why? Because the sweetness of the carrot that we have added, carrot and beetroot, will balance the whole flavor.

And because of the carrot, it will also get a nice thickness. Now we will discard these seeds and the remaining peels. And finally we will finish our soup. Now we will take 1 tablespoon of butter in our pan. And when the butter melts, we will add 1 teaspoon of finely chopped garlic.

When the garlic also turns golden, see like this, then we will add tomato puree to it. Now add some chili flakes to it according to your taste. A little black pepper powder. And along with this, some basil leaves. Now I will finish it with just 2 teaspoons of cream.

And first I will taste the salt in it. And adjust the salt according to your taste. And then we are ready to serve. Perfect! Now let’s serve it. The next soup that I am going to make is a corn soup. And the cream of corn soup, believe me, is very delicious.

It is very creamy. It is also very easy to make. So first of all, we will take 1 tablespoon of butter in a pan. When the butter is hot, first of all we will add 1 bay leaf to it. And along with this, 1 teaspoon of finely chopped garlic.

And we will sauté it lightly until the garlic turns pink. Now we will add about a quarter cup of finely chopped onion. And we will also sauté it lightly until it turns pink. The aroma of raw onion is gone. The onion has also turned pink.

So now we will add 1 teaspoon of flour to it. Now stir this. In 2 seconds, you will see that the flour will also become fragrant. When it becomes fragrant like this, then I will add 1 cup of sweet corn to it. Half a cup of finely chopped potatoes.

And along with this, 1 cup of vegetable stock too. If you don’t have vegetable stock, you can also add water. Otherwise, you can also use the soup cubes that come in the market. Now do you know what this potato we have put in it will do?

This will give our soup a nice thickness. Now cook it covered for 3 to 4 minutes. Or put a whistle in the pressure cooker. Yes, for a nice color, I am also adding a pinch of turmeric to it. To add a little more flavor to the soup,

I will add a quarter teaspoon of oregano to it. If you don’t have this oregano, then you can also use pizza seasoning. Otherwise, believe me, you can also add only 3 to 4 carom seeds by rubbing them in your hands. The flavor of oregano and thyme is a bit like carom seeds.

So you can also use it as a replacement. Now see, the potatoes have melted. And as soon as the potatoes melt, we will turn off the gas. And now we will cool down this mixture a little. When the mixture cools down, we will remove this bay leaf from it.

And after that, with 1 cup of cold milk, I will make a fine puree of this mixture. Done. Now we don’t need to filter this soup at all. Because there is no seed in it, nor is there any peel in it. We will return it to the pan once again.

I will wash it with a quarter cup of milk in 4 corners and add more milk to it. This is to set the consistency of my soup. Here, our delicious corn soup is ready. If you want, garnish it with spring onion greens. Garnish it. Drizzle a little olive oil or cream on it.

And serve it. My third soup is a very interesting soup. This is a broccoli soup. And do you know what is its special ingredient? That is white chocolate. Yes, this soup will be made with chocolate and broccoli. If you have eaten chocolate in any savoury dish before

It will become so creamy and delicious that not only kids but even adults will eat the whole bowl. Now we will add 1 cup of vegetables to it. Now we will add 1 cup of vegetables to it. And if you don’t have this stock, you can just add water.

Along with this, we will add 1 teaspoon of salt and pressure cook it until 2 whistles. Now see, our broccoli is well cooked. Now we will cool it down a little and then we will take out this bay leaf and discard it.

And then we will grind it in a mixer and make a fine puree of it. So broccoli puree is ready. Now it’s time to finish this soup. For that, first of all, let’s take a pan and take 1 tablespoon of butter in the pan.

Now we will add 1 teaspoon of refined flour to this butter and we will sauté it lightly. Now we will add 1 cup lukewarm milk to this butter and refined flour. Do not drink cold milk from the fridge, otherwise there will be a fear of lumps in your sauce.

Now we will add milk little by little and when the milk is mixed well in it, then we will add the rest of the milk. See, what will happen by doing this? By doing this, there will be no lumps in our sauce. Once the mixture comes to a boil and our sauce thickens,

Then we will add this broccoli puree prepared in it. Just about a little water, with a quarter cup of water, I will wash this jar and take out the rest of the puree from it. Now mix this well and bring this to a boil.

Believe me, it will make your life and work very easy. And now let’s start our Manchow soup, just like you drink in a restaurant, it will be exactly the same. For this, first we will heat the empty pan. Very hot, so hot that smoke starts coming out of this empty pan.

When the pan is hot, very hot, then we will add only 1 tablespoon of oil to it. Add 1 teaspoon of finely chopped garlic, 1 teaspoon of finely chopped ginger to the oil. And we will saute it well until it turns golden.

Okay, because all this cooking has to be done on high heat, so I put my pan on the big gas here, so that it heats up quickly. Now look at this, garlic and ginger have turned golden. So now we will add 1 quarter cup of finely chopped onion to it.

Within 2 minutes, this onion will also turn golden. Now we will add all the remaining vegetables to it, such as cabbage, carrots, finely chopped beans and mushrooms. Now for 2 to 3 minutes, quickly stir fry it on high flame, so that your vegetables are tender but crisp.

Vegetables have to be crisp, but also have to be slightly cooked. Now we will add 1 teaspoon of red chili paste, 1 teaspoon of soya sauce and 1 teaspoon of white vinegar to it. Now we will add 2 cups of water to it and we will bring this to a rolling boil.

Now in half a cup of water, I will mix 1 teaspoon of cornflour and make a slurry of cornflour and keep it. Now that this has come to a boil, we will add salt to taste and some pepper powder to it.

Now we will add this corn slurry to it and cook it until our soup becomes thick. Oh yum! That’s it, the soup is ready. We will serve it and top it with some fried noodles and spring onion greens. Now the next soup that we are going to make is cream of mushroom soup.

So as I am making mushroom soup, if you want, you can make cream of chicken soup in the same way. Just like I will add mushroom, you can add chopped chicken to it. The recipe will be exactly the same. So for this, let’s take 2 tablespoons of butter in the pan

And when this butter melts, we will add half a teaspoon of finely chopped garlic and this finely chopped spring onion. We will sauté the onions lightly until they turn pink. And till then, I have 200 grams of mushroom. I will finely slice this mushroom.

And now I will add these sliced mushrooms to my pan and I will sauté them until they also take some color. Now see, these mushrooms have sweated, reduced a lot and they have also taken a little color. I have fresh thyme here. So I am adding 2 sprigs of fresh thyme to it.

If you don’t have fresh thyme, you can use dried thyme instead. If you don’t have dried thyme, you can use fresh thyme. If you don’t have fresh thyme, you can use dried thyme instead. If you don’t have dried thyme, you can add a little oregano instead.

And if you don’t have oregano, then what will you do? So as I told you earlier, rub 3 to 4 cardamom seeds between your hands and then add them to it for a very similar flavor. Not exactly the same flavor, but yes, it will have a very similar flavor.

Now we will add 1 spoon of refined flour to it. And we will sauté it with this refined flour for just 2 minutes. Now we will add 2 cups of water to it and I will bring this to a boil. Now that this has come to a boil, we will season the soup

With salt and pepper. And now we will turn off the stove and let it cool down for a while. Now we will take it in our mixer jar and grind it to make a fine puree. Done. Now let’s take this soup back in our pan.

And now we will add about a quarter cup of cream to it. We will heat it a little. We will adjust the salt and pepper to our taste and then serve it. Oh! Amazing! Mushroom has a very nice meaty flavor. And you can recreate this flavor with chicken as well.

    But it's too thick.
    Usually when we order at restaurant, it comes like water or like vegetable stock soup like drinkable… That's more of a like.

  8. These are not healthy recipes and soup is meant to be a healthy option. Nothing worth trying for me at least… too much garlic onion in everything is another problem.
