Hi friends, today we are going to make incredibly delicious and easy to make zucchini pancakes. Take 2 zucchini and grate them on a coarse grater. To make our pancakes as crispy as possible, it is important to get rid of the excess liquid in the zucchini. To do this, gently squeeze them out.

Now add 4 eggs, which will make our mixture rich and nutritious. Season to taste with salt and pepper, and add half a teaspoon of dried garlic and oregano for flavor. To make the mixture homogeneous, add half a cup of flour and mix everything well.

For added spice and flavor, grate 4 ounces of hard cheese and add it to our mixture. Also, let’s not forget the fresh parsley for added freshness. Heat a frying pan and add a little vegetable oil. The pan should be hot enough.

Once the pancakes are browned on both sides, you can consider them ready. But for extra flavor and aroma, brush the finished pancakes with butter. That’s it! Your incredibly delicious zucchini pancakes are ready to serve. Try them for breakfast or dinner and they are sure to please you and your loved ones. Bon appetit!

  1. Hello Natalie, any dipping sauces you would recommend for the pancakes? Like maybe Greek yogurt and dill, something like that? Thank you….also you made this beet soup I think once, I know that isn't correct name. Did you by chance post it? Thanks again.
