These jeweled biscotti are pretty and delicious enough that you can impress your family with them. I love them with my evening coffee time. You can substitute a variety of nuts if you want.

MEK Jeweled Biscotti
1 ½ sticks soft butter- 12 tbsp
1 tsp orange zest
¾ cup sugar
2 eggs

2 ½ cups all-purpose flour
2 tsp baking powder
¼ tsp salt

½ cup whole pistachio nuts
¼ golden raisins
¼ cup dried cranberries
⅓ cup whole almonds
¼ tsp cardamom seeds powder
½ tsp fennel seeds- crushed

1 egg whisked for egg wash
Sesame seeds

Tip: Cool the logs completely before slicing them. Cooling them might take 30 to 40 minutes. Slice them diagonally but not with sawing motion as these have whole nuts. Sawing the knife back and forth will badly break them. So just push the knife straight down as can be seen in the video. Also, we will be baking them in two stages.

Preheat the oven to 350 F.
Cream butter and sugar together. The best way to cream butter and sugar is to add sugar gradually to the softened butter and whisk after each addition. Add orange zest to it.
Once the butter, sugar, and zest are creamed then add eggs one at a time and whisk after each addition.

Sift together flour, baking powder, and salt. Add cardamom powder and crushed fennel seeds to the sifted dry mix.
Start adding the dry mix to the butter mixture slowly in three additions. Mix with a spatula till the dough comes together. Now add all the nuts to it and combine it well.
Divide dough into two equal parts and roll into 10-inch logs. Brush tops with egg and sprinkle with sesame seeds. Bake at 350 F for 25 minutes. Then remove from the oven and let stand for 30 minutes without attempting to slice them. If you try slicing them when the logs are warm, you will break them.

After the logs have cooled down, transfer them to a cutting board and slice them diagonally. Read the above tip for slicing them. Slice them into ¾ inch thickness. Arrange them back on the baking tray, and lay them on their sides. Bake them again at 300 F for 18 minutes.
Take them out and let them cool completely before serving. They will crisp up once cooled. Enjoy them at your tea time, which is a luxury for us adults!😇❤️
