Turkish KOFTE & PIDE Kebab: Perfect Iftar Meal for Ramadan. On our first iftar I bring two all time favorites to one dish: Ramadan pide and Turkish kofte! We call this “Köfteli Pide” meaning köfte with pide base. It is similar to iskender and perfect to use any leftover breads or pides. But I’ll be using fresh pide that will make as well.

Ingredients for Kofte Mix:
1 medium size onion
500gr. beef or mix of beef and lamb
1 tsp each black pepper, paprika, cumin
1+1/2 tsp salt
1/2 tsp baking soda
3/4 cup bread crumbs
about 1/3 cup cold water
For the Ramadan and small pide dough:
First mix:
1/2 cup lukewarm water
20gr. fresh yeast or 1 tbsp dry active yeast
1 tbsp sugar after 5 minutes
1/2 cup lukewarm milk + 3/4 cup warm water
5 cups bread or all-purpose flour
1-2 cups whole wheat flour (its optional, you can use only all-purpose if you prefer)
2+1/2 tsp salt
2 tbsp olive oil to get the dough
For the egg wash:
1 egg yolk
2 tbsp milk or yogurt
2 tbsp olive oil
sesame and nigella seeds

We are making Turkish Köfte with Pide “Köfteli Pide” Ramadan Mubarak my friends! Welcome to my kitchen! We are famous with our spicy juicy Turkish Köfte. Especially during Ramadan, we make Ramadan Pide. In this episode, I’m going to also do one big and some small. And
We are going to use it to make our main dish. If you know İskender Kebab, it is very similar. We are going to use soft pides as a base, soak it with tomato sauce, place juicy Turkish Köftes, serve it with grilled peppers,
Tomatoes and Turkish yogurt. I’m sure it’s going to be your new favorite. Let’s make it! To make the pide, to my mixing bowl I added 1 cup lukewarm water and 20 grams fresh yeast. You can also add 1
Tspoon dry yeast and 1 tbspoon sugar. Wait for about 5 minutes to activate and add half cup warm milk and 3/4 of a cup warm water. First I added five cups of allpurpose flour or bread flour and 1 and
1/2 cup of whole wheat flour. And after mixing a little bit, added 2 and 1/2 teaspoon salt add more flour until it is somewhat sticking at the bottom. Because we want a soft, smooth dough. Drizzle
Some olive oil to take out the dough smoothly. Shape into a bowl, cover and let it rest until doubles. To make the köfte, mixture I’m using my food processor. You can also do it by hand first going to chop one big size onion. If you’re not using
Food processor, just grate with a grater. Adding 500 grams mix of lamp and beef, ground beef, teaspoon black pepper, same amount paprika and cumin. Added about the teaspoon salt and going to mix everything. And to the mixture to give a springy texture, I’m adding half a
Teaspoon of baking soda and here I have 3/4 of a cup bread crumbs. I added gradually and mixed well again. Next I’m adding 1/3 of a cup cold water and going to mix again and at this point, check the mixture again if it can hold its
Shape add a bit more bread crumbs. Pulse couple of more times and our köfte mix is ready. Rest the mixture in the fridge at least for an hour or overnight which will help all the flavors melt
Together. My köfte dough is resting in the fridge. My pide dough rises well. So I’m going to shape it. Today I would like to shape one big pide and four small ones for the pideli
Köfte. Take out the dough into lightly flowered counter top and cut into two first. One is a bit smaller to make the one big size pide and the other one I cut into four sections to make four small [Music]
Pides. You’re going to rest those and it can stick again to the bottom. So I’m going to add wheat brand to my trays and going to place down there and rest for 15 more minutes. I said 15 minutes but it can change
Depends on the temperature of your kitchen. So mine took at least 30 minutes. If you like you can roll with a rolling pin to stretch a little bit or use your hand to keep the air bubbles inside. I have vegetable oil here. I’m going to dip my hands to get some bowl, half

I melted some butter added a little bit of vegetable oil, adding two tablespoon tomato paste and after sautéing added some water and stir until smooth. We want a little bit thick sauce not too runny or either Thick. So everything is ready. We can begin to cook the köftes and serve my griddle, cast iron griddle is hot. I lightly drizzled some oil and begin to cook. The heat should be about medium-high not too low and within 1 2 minutes it will

my recommendation for the bread is to use “roomal” instead of egg. It’s a paste made of flour, baking soda, and water used on Iranian Barbari bread.
