SPINACH STRAWBERRY SALAD INGREDIENTS:
2 cups Spinach
2 oz goat cheese
2 TBS roasted pecan pieces
3 oz chicken
1/2 cup strawberry halves

Hey y’all it’s Kathy welcome to my galliston diet journey and today I want to share a spring salad recipe for you this is not a novel salad you’ve probably had one before but I was able to get the macros pretty much on point with 71% healthy fat 25% protein and

Only 4% carbs so it is definitely on point for the Galveston diet and I think that this would be a great addition to your Easter meal if you are hosting Easter or if you’re not hosting Easter maybe you don’t celebrate Easter regardless spring has sprung I don’t know about where you live

But today is gorgeous I’ve had the windows open all day it’s 74° outside it’s sunny the the sky is blue the birds are singing and it just made me so anxious for spring so I really wanted to share this recipe for you with you so I

Don’t know about you but when I buy spinach I have a really hard time using up the whole bag or whole container of spinach before it starts getting slimy so I don’t buy spinach that often however for this particular salad I really recommend that you go with spinach instead of something like Roma

Or the spring mix spring mix would do really well in this salad but spinach is just so much better for you than lettuce is it has iron and vitamin C and magnesium in it and we all know that in the galison diet she recommends recommends you um getting your magnesium

It’ll help you sleep and it regulates some of that menopause symptoms that you might be experiencing so eating spinach might be a way to help get your magnesium intake up a little bit um this time however I planned my meals so that I could use up

The entire bag of spinach before it got slimy so over the weekend I made these spinach goat cheese um egg muffins and they were really good and my husband even liked them we uh kind of started eating them and I thought oh I should take a picture for my channel um

I can link the recipe to it below I didn’t come up with the recipe so I’ll just link it below but it was really good and it’s a great way to use up some spinach if you are wanting to make this spinach salad recipe and have a little

Leftover or vice versa you want to make the muffins and you need something else to use up the rest of the spinach you can make the muffins and the salad together so here’s what you need for this salad you need obviously spinach two cups uh you need a half2 cup of

Strawberries now when I cut my strawberries up I chop them up a little bit small not diced but a little bit small smaller cuz you can fit more in the half cup and it makes the salad super yummy and of course I have to give a strawberry piece to my teddy bear dogs

Lady and Ranger lady likes strawberries more than Ranger he really just eats them so that she won’t eat it they’re like true siblings they are from the same litter and they like true siblings where um Ranger doesn’t really like it but he’ll eat it just so she can’t have

It anyway so two uh half cup of strawberries and then for this recipe you could leave the chicken out but you would have to adjust the macros but I use three oz of cooked chicken I gave lady and Ranger some of the chicken also but you have to watch because like I

Said they like to steal from each other and don’t want the other to have it so Ranger was pretty quick there and got it so I had to give lady extra also and then two tablespoon of roasted pecans I just put it in a pan with some butter

And toast them a little bit in the pan and that’s how I get my toasted pecans don’t get the candied pecans unless you adjust your Macros that has too much sugar and we’re trying to keep the um glycemic um whatever whatever it’s called down we don’t want our uh blood

Sugar to spike up so adding extra sugar is not a good thing for this and then um you can add your cheese now you could either do feta cheese or goat cheese if you don’t like goat cheese although if you don’t like goat cheese we can’t be

Friends because I think goat cheese is delightful so um 2 oz of goat cheese for this recipe and I don’t have a demo on how to put the salad together because everybody knows how to do a salad right so the um dressing that I used was this

Primal kitchen dressing and I’m going to be honest with you I am on a search for a new brand of dressings and I’ll make a video about it later but this dressing uh she recom recommends this brand for ranch dressing in the galvon diet book and it’s because it has

Avocado oil in it which is a really healthy fat and that’s one of the reasons that for this salad the healthy fat count is so high so it’s a really great salad for the Galveston diet but there’s something about the way it’s made that it really this is not an empty bottle

It really is thick and hard to I mean you can’t even Shake It Out in order to get out um the two tablespoons which is for this recipe uh two tablespoons I had to get a knife and scrape it out into the um measuring spoon and then it’s

Really thick so it doesn’t um spread well in it doesn’t go far in the salad so if you’re using Primal kitchen brand poppy seed dressing I suggest that once you scrape out your um two tablespoons you add a little water and whisk it together and it’ll make it spread over

The salad more and it will seem like more it has great flavor and I don’t think and when I say water it down I’m talking about adding a teaspoon or whatever you think would be a good consistency um just to get it to spread and go

Further in your salad I had to literally put this in the microwave for um 10 seconds just to get it to to pour out enough and that I could scrape it out enough so that’s not very practical especially now if you’re just doing it

At home it’s fine but if you are a take salad to work person and you want your little container of salad dressing because putting salad dressing on a salad then packing it to go makes the lettuce all wilty or the spinach leaves all wilty and so that’s not fun so if

You’re a take your salad work person um you you might look kind of weird putting a bottle of salad dressing in the microwave or if you put it in a little container to go you would have to microwave you know and that may not be convenient for you you do you and maybe

You love this but I am going to be on the search for a different um poppy seed salad dressing just cuz it’s not very convenient um so I also wanted to tell you how I get to 3 oz of chicken and um what was the other 2 oz of goat cheese

So this is the scale I use this is really convenient when when um you have ounces or any kind of measurement because what I love about this if you can see right here it has a little zero out button and so when I’m measuring my you turn it

Ono and um and it counts down I don’t you probably can’t see that and then it has zero so if you’re measuring something out into a container you don’t want the weight of the container to be a part of it so when you put your container on you can hit the little zero

Out button and it goes back down to zero so that anything you add after that is just the food so that’s how I did my chicken and that’s how I did my goat cheese um to get it to the right ounces for the salad so this is a really um

Convenient and great scale to use I’m not getting anything for recommending this to you this is really truly the scale I use and um this is the brand it’s called Oxo I don’t know it looks blurry but I’m not wearing my glasses so maybe that’s clear but I just got it on

Amazon Oxo is the brand and I really love this scale so I highly recommend this scale um I actually also recently bought a wine opener that was this brand and I love it so I’m going to be looking for more things that are this brand for

Sure now the other thing I wanted to show you is if you are and I’m not getting anything for this either um this is just something I bought and um we actually bought six of them and that I’m using they’re little salad to go kits

Let me show you the brand cuz if I try to say it I’ll murder it um these are blue but they came in all kinds of colors and I just think getting I mean I love blue it’s my favorite color but getting things in happy colors if you’re having to put

Something in the dishwasher and wash it you might as well like the way it looks I love I love to do happy things like that so I got Navy because our whole house is decorated in Navy and it just makes me happy for everything to match

So this is what it looks like it has a cutie patootie little thing you can put your salad dressing in and then you can put the other things in top and then the lettuce in the bottom and it actually even comes with a fork um but I didn’t I

Forgot to get the fork to show you um they’re super cute and I got them on Amazon like I said we got six so yes or today when I was making this uh strawberry salad for myself I went ahead and prepared one for my husband for

Tomorrow and so he will already have his little salad ready to take to work and it’s really convenient so we are trying to be more healthful not just lose weight if you’ve been following me any amount of time you know that um as I’ve been on the Galviston diet for about a

Year now a little over a year I would sprinkle in a lot of dirty keto for convenience and um this year I’m trying to be a little more true to the Galveston diet which is to help you lower inflammation and fight menopause symptoms which I happen to be pretty

Lucky that I don’t have a lot of menopause symptoms but I still Want no it’s okay I can just edit it out I’m pretty lucky in that I don’t have a lot of menopause symptoms but I still want to be as healthy as possible right so that is one of our goals for this year is just to eat a little bit healthier anyway that
