For the manicotti:
1 box of manicotti pasta shells
2 cups ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 egg, lightly beaten
2 tablespoons chopped fresh parsley
1/2 teaspoon dried oregano
Salt and pepper to taste
For the sauce:
2 tablespoons olive oil
4 cloves garlic, minced
1 onion, finely chopped
1 (28 oz) can crushed tomatoes
1 (14 oz) can tomato sauce
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Instructions:
Prepare the manicotti shells: Cook the manicotti shells according to the package instructions until they are al dente. Drain and set aside to cool.

Make the filling: In a large bowl, combine the ricotta cheese, mozzarella cheese, Parmesan cheese, egg, parsley, oregano, salt, and pepper. Mix until well combined.

Fill the manicotti shells: Using a spoon or a piping bag, stuff each manicotti shell with the cheese mixture. Be careful not to overfill, as the filling will expand during cooking.
