RECIPES
BREAKFAST:
Breakfast burritos
1 package of firm tofu
Seasoning: garlic powder, onion powder, paprika, cumin, curry powder, garlic, and herb seasoning, oregano,( forgot turmeric but turmeric adds that yellow egg color) adobo, pink salt, black pepper
PRODUCE –
Handful of chopped kale
1 can of black beans ( can use any beans you like)
1/2 red pepper, 1/2 green pepper, 1 small Roma tomato 1/4 cup of red onion, chopped cilantro
olive oil for sauteing
Roasted Potatoes
Seasoning: Seasoning: garlic powder, onion powder, paprika, cumin, garlic and herb seasoning, oregano, adobo, pink salt, black pepper
olive oil for roasting
Avocado Hemp Dressing
1 whole avocado
1/2 cup of hemp seeds
1/4 cup vegan mayo
1 -2 tbsp fresh lime juice or lemon juice
1/2 cup cilantro
salt, pepper, garlic powder, onion powder, red pepper flakes
splash of water ( helps with smoothing out dressing texture)
Forgot to add vegan cheese (it is optional)
I usually use Follow Your Heart vegan cheese ( whatever you like)
You can add in any additional toppings, or ingrediants you’d like
Berrie oatmeal bars
Berrie Compote:
1 cup of blueberries
1 cup of strawberries
1/2 cup maple syrup
1/2 cup of water
1/4 cup of lemon juice

LUNCH
Chickpea Artichoke Patties
1 can of chickpea drained and mashed
1 jar of marinated artichoke hearts chopped
1/4 cup of red onion chopped
1/4 cup celery chopped
1/2 cup of green peppers chopped
1/2 cup of fresh cilantro chopped
1/2 cup of oats
1/4 cup of all-purpose flour or whole-grain flour
1/4 cup of panko breadcrumbs
1 minced garlic clove
Seasoning: ( I did not measure but you can do about 1/2 tsp of each except red pepper flakes, and allspice (You can add a pinch as they are very potent)
garlic powder, onion powder, red pepper flakes, cumin, turmeric, garlic and herb seasoning, oregano, adobo, pink salt, black pepper, coriander, allspice(pinch), fennel seeds
DINNER:
Seitan steaks Used someone’s recipe on Instagram)
White mac and cheese
1 – 2 cups of noodles of choice
sauce –
1 cup of plant-based milk ( I used oat) + additional milk to think out base
1 cup of vegan mozzarella ( you can also make your own mozzarella and use that if you do not want to use store-bought)
1 TBSP of agar agar or cornstarch
4 TBSP of vegan butter
2 TBSP veggie stock
( if to thick just keep adding milk until desired texture)
( if to thin add more vegan cheese and or cornstarch)
Seasoning: garlic powder, onion powder, Italian seasoning, oregano, adobo, pink salt, black pepper, pinch of curry powder
DESSERT:
Sweet Potatoe Brownies
3/4 cup of sweet potato
3/4 cup of almond butter ( or peanut butter)
1/3 cup of high-quality cocoa powder ( I used dark cocoa)
1/2 cup of maple syrup
1/2 cup of vegan-friendly semi-sweet chocolate chips in batter
+ Vegan-friendly chocolate chips to top brownies
