BLACKBERRY COBBLER RECIPE
Ingredients:
2 c blackberries
1 c monk fruit sweetener
1 1/4 c blanched almond flour
1/4 c buttermilk powder
1 tsp baking soda
1 tsp vanilla extract
2 large eggs
1/2 cup salted butter
1/2 cup coconut oil

Directions (full tips and detail in video):
1. Melt coconut oil in microwave; add butter (do not microwave butter to melt!) and set aside.
2. Mix flour, buttermilk, sweetener, and baking soda in a medium mixing bowl.
3. Place blackberries in a 8 x 8 baking dish.
4. Stir butter until mixed into oil until combined; add vanilla and eggs. Stir.
5. Pour dry mixture on top of berries and spread.
6. Pour egg mixture on top of dry mixture and spread.
7. Bake at 350 for 35-40 minutes until golden brown and bubbly.

Hey y’all it’s Kathy and welcome to my Galveston diet Journey today I want to share a recipe with you that turned out amazing I’m really excited with how well this recipe turned out it is for blackberry cobbler this is going to be another recipe that you can cook on

Easter I mean you can cook it anytime but I’m trying to come up with some spring recipes that are still Galveston friendly and that would go great um for an Easter dinner so blackberry cobbler it’s got the fruit it’s got the sweet guilt-free it is really high in healthy

Fats and so you can eat it add it to whatever else you’re making your Easter menu and I think you and other people who aren’t doing the Galviston diet will even like this recipe so it is great I’m really excited to share it with you so here is what you

Need you need two cups blackberries I used fresh but Frozen would probably do okay too um now when I was calculating the macros for this recipe as you see the healthy fat is really high and the carb count is really low and typically on the galston diet you limit your fruit

Because it has a higher carb C and a lot of fruits will Spike up your insulin which messes with your blood sugar and it’s not the Galveston diet way but because the carb count and uh fat are so high in the macros of this recipe I kind of played with a little

Bit CU I know not everybody likes blackberries I made blackberry cobbler because I knew the carb count was low but also because blackberry cobbler is my dad’s favorite but he also likes peach cobbler and my mom when I was growing up had an amazing peach cobbler recipe so I kind

Of played with the macros a little bit and you could probably substitute out two cups of peaches for the blackberries without it messing too badly with the macros of course you’d have to put it in your macro traing app just to make sure that you’re not messing them up too much

But I did it and it changed it some it kicked the carbs up and the fat and protein down but like I said with the fat being so high you can afford to do that with this recipe but make sure you use fresh or frozen peaches not the

Canned that are in heavy syrup because that would totally wreck it all right so you also need one cup of monk fruit sweetener and 1/4 cup powdered buttermilk you need one teaspoon vanilla make sure it’s pure vanilla extract two eggs 1/2 cup of butter and 1/2 cup of coconut

Oil one and 1/4 cup blanched almond flour now this is not almond meal it’s almond uh blanched almond flour it has a finer texture I get the Anthony’s brand order it off of Amazon because I don’t have a Whole Foods um close to me and so

I Rely heavily on Amazon for some of these items that I can’t just find at my local grocery store so but make sure it’s blanched almond flour not almond meal almond meal would be too gritty and grainy and I don’t think it would bake right okay so here’s how you make

It first you take your coconut oil and I just used a Kroger brand there might be like organic or healthy but this is just what I had in my pantry and 1/2 cup is 8 tablespoons so I just love these two tablespoon measuring spoons I get them

On Amazon in bulk you can buy them three at a time they’re so convenient because it’s a two tablespoon and there’s so many times in a recipe that it calls for two tablespoons um I use it for my coffee I use it for my collagen powder in the morning they’re just so con

Venient so you can get these for like 14 bucks on Amazon so I just wanted to let you uh know that these are pretty cheap and they’re really convenient so I love the two tablespoon uh measuring spoons half a cup is eight tablespoons so I only needed to do four uh measurements

To get to half a cup of the coconut oil so I just kind of packed it in and scraped it off I wasn’t super exact about it but um got my coconut oil ready to go then you stick it in the microwave for 60 seconds to let it melt and while

It’s melting you can grab your butter you need A4 cup which is 4 tablespoon of butter so once the coconut oil is melted you can add the butter now don’t do what I did I learned the hard way that you should cut the butter up before you add

It to the hot oil because the butter got slippery and I was trying to cut it into tablespoon siiz pieces and trying to mix it in without slashing the hot oil out so you should probably cut it up before you add it to the oil you know make

Mistakes live on camera I didn’t want to waste another thing of butter to do it the other way so I just recommend cutting it up first then once the butter is in the coconut oil you kind of want to swish it around and set it aside to let the

Butter soften while that’s happening you can go ahead and put your blackberries in an oven proof baking dish now I used a longer like uh I guess 8 by 11 size baking dish but I really recommend you use an 8 by8 square because the recipe

Um I divided it for the macros into four servings and it would cut more evenly and better in four and I think it would bake better but my 8 by8 baking dish was dirty so I just used this one and it ended up working fine but um I

Definitely suggest that you use an 8 by8 so next I got my almond flour it’s blanched almond flour remember because it’s a finer consistency and you need a cup and A4 cup and then just A4 cup of the buttermilk powder like I said you can order both both of these on Amazon if

You can’t get them at your local store after you’ve combined those you just mix them up a little bit and then I added a half teaspoon of baking powder once you’ve stirred your dry ingredients together you can then stir your butter into your oil um to make sure that it’s

Softened and well combined with the oil at this point it should be cool enough to add the eggs um you don’t want to add the eggs directly to like the hot butter and the hot oil because you don’t want your eggs to start cooking before you’ve combined in everything and put it

In the oven so that’s one of the reasons that I didn’t melt the butter in the oil in the microwave I just let the butter soften and then I mixed it in so that when I added my eggs everything was cool enough that the eggs wouldn’t cook now I

Like to use p pure raised eggs the the yolk is just this bright orange it’s not that pale yellow that you get from the cheaper um brands of eggs but I know that you have to these days take out a loan to buy eggs cuz inflation and the

Prices have just gone way up when we get to our land um and actually build our house on our land we’re going to get some chickens and so we’ll be harvesting our own Pastor raised eggs but we’re not there yet um the only thing we’ve gotten

Done on the land for those of you who are following and know um that we’re g to be moving in the next year or so is we got our well dug that was a big messy process but we got that done um and then we also planted an apple orchard a very

Small apple orchard we only have four little baby trees um but I’m excited for those trees to go ahead and start growing and take root before we can um moved to the land that’s why we went ahead and planted the trees and then we also have our new beehive on the land we

Just put there last weekend and um our bees will arrive in about 3 weeks we’re going to get live bees so that is going to be I’m letting my husband be The Beekeeper because I don’t want to get stung but eventually we’ll have honey and apples I think it takes two years

For your bees to make enough honey that you can take it from them without stealing from their stash and then it takes about four years for your apples to um your apple trees to produce apples so we’ll have all that going on um about the same time hopefully that we get our

Chickens and we’re going to have our little Homestead going on I’m really excited about that so in future videos maybe I’ll get to use eggs that I’ve harvested from my own chickens but not today today I get the really expensive eggs and um use those so after you have

Mixed the eggs in you can see that it worked the uh oil and the butter was cold enough um once I mixed in the eggs you can actually see that the um coconut oil started to get a little clumpy and cold it thickened up some and that’s

Exactly what I wanted because I didn’t want the eggs to cook Now coconut oil recently over the past few years has kind of gotten a bad wrap for not being a healthy oil I’m going to let youall make that decision on whether you decide

You want to use coconut oil or not I as you know if you’ve been following me I really trust the food babe for things like that she does a lot of research into what is healthy and what the food industry says is healthy or isn’t

Healthy and why and a lot of times you follow the money Trail and they promote certain foods that aren’t healthy because they have money backers and it’s all this I don’t want to get into this big conspiracy thing but she has a really interesting book um that is

Called feeding you lies and it talks about the food industry and the things that we’re told and why we’re told lies about food and all of that if that interests you at all I recommend you read it that’s why I’m choosing coconut oil in this recipe because I trust her

Research and her reasoning for why coconut oil is healthy and I’ll actually link an article below that’s specifically about coconut oil and the coconut oil controversy so once you’ve Incorporated the sweetener into the flour and powdered buttermilk you can pour the dry mixture over your berries

Or peaches or whatever you’re doing so I love love love these mixing bowls I got them on Amazon and y’all know I like everything to be matchy um so these come in blues and they come in like 14 different colors so anybody could find mixing bowls like

These to work with their kitchen and their colors in their house but I love them CU they don’t take a a lot of room in the cabinet they they’re nesting and as I poured it over the Blackberry I realized how convenient it is to have for them to have these little handles

And hold on to um my other mixing bowl that I had was like over 20 years old and it’s just a glass bowl and it’s hard to hold on to when you’re trying to scrape out so but these the handle you get a good grip and you can just scrape

Out I love these mixing bowls from Amazon I highly recommend them so once you get your dry ingredients over the berries just kind of spread it over the top and then you can spread your egg mixture over the top of that now because everything had cooled it was thicker

Than I thought but I just got a spatula and spread it around and then I crossed my fingers that the oven would do its magic and that it would melt down um into the dry mixture and the berries and bake appropriately um and it did I was

So excited to see that it worked I had adapted this recipe from an old like cheater uh cobbler recipe that I used to make called poor booy cobbler or po booy cobbler um where all you do is you take a white cake mix and pour it over your

Fruit and then pour butter over that and bake it so it’s super easy way to make cobbler um but obviously we didn’t want the white flour and the white sugar suar and that kind of thing so I had to think of a way to make a dry mixture that was

Going to be have a low glycemic index and be appropriate for the Galveston diet so I played around with it and this is what I came up with it and it just turned out beautifully there’s nothing like experimenting on camera but when it came out of the oven it was golden brown

It was piping hot it smelled delicious I baked it um at 350 for 35 minutes and then had to let it cool and the house smelled like heaven it was so delicious so I hope that this recipe works for you and that you um enjoy it definitely try it because it’s

  2. Looks delicious! Any suggestions about how I could substitute for the powdered buttermilk? I have a milk allergy that I must take seriously. I can use vegan milk and butter, but not sure about the buttermilk powder. I guess I would have to recalculate the macros too for the changes and maybe it wouldn’t work then.
