Hi everyone and welcome to Nicko’s kitchen once again today we’re making one of the soup classics a clean beautiful no fuss pumpkin soup all righty guys the most amazing pumpkin soup you’ll ever ever have I promise you this is a must because everybody can do

This and it is so simple it’s very basic we’re using fresh produce it is just clean flavors and it’s amazing trust me so this is what you’re going to need you’re going to need a pumpkin of course now just a normal pumpkin you don’t have to use a butternut or

Anything like that just a normal pumpkin will do you’re going to need a couple of brown onions a few potatoes and a couple of carrots and that’s it guys and of course obviously some water there’s no stalks there’s no chicken or vegetable stocks there’s no cream to bog it down

It’s just simple produce so let’s get started right guys so you can see there that I’ve chopped up all my vegetables into diced pieces okay so I’ve got pumpkin the onion the potato and the carrot obviously the bulk of the vegetable there is pumpkin let me just tell you

What the other ingredients do the onion gives it a really nice flavor it just brings alive the whole dish the potato makes it nice and creamy and that carrot let me tell you is the star of the show it brings out all of the ingredients and

It gives it a great color so we’ve got a pot of boiling water going I’m going to take you over there and we’re going to put our vegetables in right guys so now we want to put our vegetables in our boiling water right guys and also season

With a generous helping of salt and pepper now guys the reason why we don’t need any chicken stocks or vegetable stocks is because we’re making our own pumpkin stock inside here okay so there’s no need for cream or any other stock we’re making our own as we go

Along so leave that to simmer for about an hour to an hour and a quarter and then we’re going to blitz it down okay guys our pumpkin soup is looking beautiful now you’ll know when your pumpkin and your potatoes are cooked through because as you bring them up to

The side if you just cut them across with a spoon you’ll hear the knocking noise on the pot now guys I just wanted to show you the color of this stock have a look at that have a look at that color it is the most beautiful sunset orange

It’s fantastic and that was the stock that I was talking about create your own with the pumpkin now guys what we do is we turn the heat off completely and then guys what we want to do using a Blitzer just like that or you can put it in a

Blender but I find this easiest way just put it in the bottom of the pot and just very carefully blitz all those vegetables down have a look at that absolutely beautiful now we seasoned this before but I do want to give it another try just to make sure we’ve got

The balance right always remember taste taste taste your food before you serve it okay guys our pumpkin soup is done and we’re ready to serve it up and there you have it guys Niko’s perfect pumpkin soup serve with a bread roll and you can spread some nice hot
