Ingredients:

Olive oil
Chicken breasts
Fresh mozzarella cheese sliced
Fresh grated Parmigiano Reggiano cheese
Italian bread crumbs
Salt, pepper, garlic seasoning
Oregano
Marinara sauce

Begin by Butterflying a chicken breast, cover it with plastic and use a mallet until thin with even thickness. Use a good quality olive oil and generously spread it on the chicken then season with Kinder’s Salt, pepper, garlic. Add some grated parmigiano reggiano to Italian bread crumbs. Coat the chicken well and shake off the excess. Shallow fry in olive oil until both sides are golden brown. Spoon on some good quality marinara, top with fresh mozzarella, grated parmigiano reggiano and dried oregano. Put on a racked baking sheet and into a 400 degree oven for about 7-9 minutes until the cheese is melted. Remove from the oven and grate some fresh parmigiano reggiano on top, cut into it and enjoy!
