Okay hello how are you guys I’m Stephanie Hansen I’m here with Stephanie’s dish and I am going to make some roasted buffalo cauliflower now where I’m from in the midwest it’s cold in Minnesota so in the winter we’re roasting everything right we’re trying to keep our houses warm and we’re trying

To think of ways to get creative with our veg so I am taking a cauliflower here and just trimming off these parts um whenever I’m trimming vegetables you know what I do I’m going to show you that sound was me opening my freezer because I make a stock bag and I put all

The bits and bites and parts and pieces of my veggie in my stock bag and then when I get enough and I have chicken bones that I can put with it or sometimes I just make veggie stock I put that in my instant pot for about 45

Minutes and I make stock so now we’ve we’ve got this beautiful nice head of cauliflower hi Stanley are you helping us today Stanley is my dog I’m going to go ahead and just cut out the core and that will give me a lot of really nice

Gettes and I am going to put them in a bowl with some olive oil I want them to be like bite-sized pieces so this one’s pretty big so I’m going to just cut that in half so I’m just going to go around and like assess are these too big do I

Want to cut them I could even cut them into quarters if they’re super large because these are all going to be things that people are going to be dipping into a sauce because I’m making a buffalo cauliflower I love buffalo sauce I love wings but I don’t always

Love eating wings all the time sometimes in the winter I like a little veg you know so I just make these little florets into little pieces and put them in my bowl I’m going to toss them with some olive oil and some seasoning and then I’m

Going to roast them on a pan and then I’m going to hit them with some buffalo sauce I love buffalo sauce I love wings but I don’t always love eating wings all the time sometimes in the winter I like a little veg you know so I just make these little

Florets into little pieces and put them in my bowl I’m going to toss them with some olive oil and some seasoning and then I’m going to roast them so we have about 1/4 cup of olive oil here and we’re going to toss our veggies you need

Kind of a lot because you want to get the spices to adhere and you want the olive oil to get into the cauliflower and get all roasty and toasty our seasonings I’ve got about a teaspoon of salt cuz you want to Salt your food right I’ve also got 1 and 1/2

Teaspoons of smoked paprika and this is going to give it that beautiful color then I’m going to add some garlic powder about a teaspoon then I’m going to add about a/4 teaspoon of cumin just a little bit give it that kind of earthy flavor little bit of Cracked

Pepper and I’m going to go ahead and toss this up and then I’m going to throw it on a sheet pan and I’m going to roast it in the oven at 4 50° I’m going to roast these for about 15 minutes and then I’m going to take

Them out and I’m going to toss them in Buffalo sauce and then put them back in the oven now I’m not going to kid you these aren’t going to be like crispy wings or anything but they’re going to still have that Buffalo flavor and be super delicious all right so let’s go

Ahead and put them on our tray pan and we want to give them plenty of room to spread out it’s a pretty big tray pan you could easily do two heads of cauliflower at a time just get them so that they’re spread out here and have plenty of room

To do their job of getting roasty and toasty and you know some of these little bits are going to cook faster that’s okay they’re fine as long as they don’t burn so we’ll check this we’re going to only cook this for about like I said 15 minutes but we’ll check it after about

10: okay our cauliflower is getting roasty and and toasty so we’ll go ahead and grab it here and we’re going to put it back in our Bowl see it looks pretty good we’re going to go ahead and put it back in our Bowl I did check it at the

10-minute Mark and things look like they were going okay so I’m continuing on all right so I’ve got the cauliflower in there now I’m going to hit it with the Frank’s Red hot buffalo sauce they say to use about 1/4 cup I want all the pieces to get

Coated and franks is hot but it’s not too hot it’s more vinegary so we’re going to toss it and then we’re going to throw it back in the oven and really bake this sauce into the cauliflower let’s get our pan going put our cflower back on there I’m going to just spread it

Out so that every little piece has time to get all toasty okay so we’re going to go ahead and drop it back in the oven for 10 more minutes while my buffalo cauliflower is crisping up I’m going to make my Teragon Ranch buttermilk ranch dressing this is

My homemade dressing it’s so much better than your usual Ranch it’s very delicious ious so we’re going to start we’ve got some buttermilk you can use a half of a cup or 3/4 cup we’re going to add one 2 3 tablespoon of plain F yogurt we are also going to add a couple

Tablespoons of mayonnaise and sometimes when I’m having these dressing recipes I say like one to two kind of depends on your personal taste and like do you like more of a mayonnaise situation in your ranch or do you like more of a tart uh situation in your Ranch so

That’s kind of what the difference is get that in there okay so we’ve got our mayonnaise we’ve got our yogurt now we’re going to go with our dry seasonings and we’re going to use a teaspoon of Teragon and the longer this sits the stronger it’s going to be so if

You make it in the morning it’ll be perfect for you in the afternoon which isn’t to say that you can’t eat it right now which is what I’m going to do but it’ll just get stronger throughout the day Teragon is a unique flavor that I really like and it really amps up kind

Of that garlic ranchy lemony situation all right so I have microplaned one whole garlic clove and I’m putting that in there there you go friends I also am going to add a little bit of probably about a half a teaspoon I don’t really want it super mustardy I just

Want a little bit of that heat and then we are going to add our lemon juice I’m going to use this is a really big lemon that isn’t going to fit in my little thing I’m going to use about a tablespoon of juice maybe two depending on how much is

In here again the buttermilk is already sour so that’s going to give me that that I’m going to add a little bit of salt cuz I always want to Salt my dressings just a little bit of a/4 teaspoon couple dashes of Tabasco and then I happen to have some

Fresh dill if you don’t have it you don’t have to use it but when I have it I like to use it cuz I always like to add just a hint of freshness so I’m just going to chop a little bit up probably about a tablespoon

And I’m going to get all this going with a whisk and this is going to be our sauce for our buffalo bites all right get that in there boom boom and then I’m going to just whisk everything together come on friends all right just get this whisk

Together make sure I get the right consistency that I want for dipping sitch ooh yeah yeah this will sit in your refrigerator too buttermilk is basically already sour so it lasts forever look how good that looks little ranch situation Ranch there’s look at it and I’m going to go ahead and get our

Buffalo bites all right look at those they are roasty and toasty how good does that look yum and you do get some good crispy bits in there I wouldn’t say it’s like a chicken wing but it is pretty delicious nonetheless now I’ve got my little ranchy sauce there I’m going to

Put a little bit of it into a smaller Bowl let’s see what we got here all right this one looks pretty good o look at that it’s brown it’s roasty it’s toasty I can smell it it’s got that Buffalo flavoring put it in my little homemade Teragon Ranch here and I’m

Eating these alone so I’m going to double dip oh this is so good because I’m not going to get all bloated from eating like a ton of wings but I can eat this whole cauliflower had by myself so it’s going to be good for me my dressing is

Pretty healthy buttermilk is not bad yogurt I’ve only got a little bit of mayonnaise I’ve got that hit of the Teragon that’s going to get stronger and stronger as the dressing sits and this is just super delicious kids would even like this anyone who likes buffalo sauce
