Ingredients:
For the Meatballs
300 to 500 g ground beef
1 small onion, – finely chopped or grated
3 tbsp chopped fresh parsley
1 tsp paprika
1 tsp cumin
1 tsp salt
1/4 tsp black pepper
1/4 tsp ginger powder – (optional)

For the Tomato Sauce
3 fresh tomatoes
1/4 cup olive oil or vegetable oil
1 medium onion, – finely chopped
2 cloves garlic, – pressed or finely chopped
1 tsp paprika
1 tsp cumin
1.5 tsp salt – (or to taste)
1/4 tsp black pepper – (or to taste)
1/4 tsp ginger powder – (optional)
1 bay leaf
1 tsp tomato paste
2 tbsp finely chopped parsley

For Garnish (Optional)
2 – 4 eggs – (1 egg per person)
fresh parsley or cilantro sprigs

Add 2 garlics chopped and saute for another minute or two, until fragrant. Be careful not to burn the garlic and add 1 bay leaf Add the chopped onion and stir for 1 minute Add the chopped tomatoes and stir to combine 1 tsp paprika Salt and black peppers to taste

1 tsp cumin + 1/2 tsp ginger powder Stir to combine 1 tbsp tomato paste Stir and add a little water if necessary to smooth out the sauce, I only added 50 ml of water Add the chopped of parsley

Cover and cook it for about 20 min over low heat In 20 min, the tomatoes will be soften When the consistency of the sauce is to your liking, taste and adjust seasoning. Add the meatballs. Cover and continue simmering for another 10 minutes

In 10 min, turn the meatball on the other side. Cover and let it cook for another 2 minutes Add your eggs, 1 egg per person Eggs are optional, feel free to skip it if you like Cover and cook for another 2 minutes
