Cream Puffs (profiteroles, choux à la crème) are a classic French dessert filled with a typically sweet and moist filling of custard, whipped cream or ice cream. The puffs may be left plain, dusted with powdered sugar or garnished with chocolate sauce.

INGREDIENTS:
For the puffs:
– 250 ml water
– 80 g lard (or butter)
– 130 g flour
– 4 eggs

For the custard (vanilla cream):
– 4 eggs
– 150 g granulated sugar
– 2 packets vanilla sugar
– 600 ml milk
– 5 tbsp flour
– 100 g butter

For decoration:
– whipped cream
– chocolate sauce

Meanwhile, beat 4 egg whites incorporate 4 egg yolks in the flour paste and mix very well also incorporate the beaten egg whites and mix well transfer the dough to a pipping bag and make the puffs then bake them in the preheated oven at 350°F (180°C) for about 30 min or until golden brown

Meanwhile, in a large bowl, mix 4 egg yolks with 150 g granulated sugar and 2 packets of vanilla sugar incorporate (gradually) 600 ml of milk add 5 tablespoons of flour (or cornstarch) mix until you get a smooth cream, then continue adding the remaining milk

In a sauce pan, over medium heat, pour the cream and boil until the cream becomes thick add 100 g butter and mix until the cream gets smooth beat 4 egg whites and then incorporate them into the cream cut each puff in half fill each puff with vanilla cream add whipped cream
