Baked Mediterranean Tofu Feta Pasta – 32.6g protein per serving.

There were a few comments labelling tofu as a UPF (ultra processed food) last week, so I’m addressing those claims within the video! 💚

Protein breakdown:

Tofu: 33.2g
Pasta (200g dried): 24g
Cashew cream: 8g

=65.2g
/2 = 32.6g

Ingredients

250g firm tofu
Feta marinade: 2 tbsp nooch, 3 tbsp olive oil, 1 tbsp oregano, 1/2 tsp salt, juice of half a lemon, black pepper, 2 cloves crushed garlic
Pasta for 2
200g cherry tomatoes
Half a red pepper, cut into strips
Half a small aubergine, cut into cubes
6 florets of broccoli
4 tbsp olive oil
Big pinch salt
Black pepper
4 whole cloves of garlic, skin on
10 Kalamata olives
Small handful of torn basil leaves
70ml (about 5 tbsp) cashew cream or other cream substitute
Juice of half a lemon

To serve:
Fresh rocket
Balsamic vinegar
More cream
Olive oil
Black pepper
Optional Parmesan

This episode of 30 minute meals with over 30 grams of protein is dedicated to all the soy boys out there it’s a Mediterranean style baked tofu feta pasta It’s kind of based off of that Viral Trend a few years ago which I’ve never actually tried but I love the idea

Of everything coming together in one tray and the tofu with the fetal likee marinade works really really well last week I made a video discussing the effects of soy on our hormones it ruffled some feathers and there were also quite a lot of comments from people classing tofu as an ultr processed food

Which is simply not true it’s actually classed as minimally processed the same as ground nuts coffee dried pastas just to name a few as for concerns around genetically modified soy crops most of these crops are actually fed to animals this does differ from Europe to the US

So if you’re unsure always buy organic all in all the benefits definitely outweigh any risk it’s affordable accessible nutrient rich and it behaves like a flavor sponge if you’ve never eaten it before this is a great beginner friendly easy recipe to get you started
