Stunning side dish for Easter! These Rainbow carrots are delicious and super easy to make!

Roasted Rainbow Carrots
2lbs rainbow carrots
1/4 cup butter
1 teas sugar (yes sugar!!)
Salt & pepper to taste
Fresh parsley or thyme

1. Preheat oven to 425F
2. Peel carrots and place on a baking sheet
3. Melt butter and pour over carrots rolling them around until they are all covered in butter
4. Sprinkle sugar on carrots and season with salt and pepper
5. Bake at 425 for 30-35 minutes until carrots are browned and soft
6. Garnish with fresh parsley or thyme. Enjoy!

Start by peeling these beautiful rainbow carrots then you want to melt a/4 cup of butter and drizzle it over all the carrots rolling them around in it to make sure they are all well covered in butter sprinkle with sugar for extra sweetness and fresh salt and ground
