Learn how to make scrumptious matzoh ball soup with master chef Rosalie Waldman, the best Jewish cook on Long Island.

AUNT ROSALIE’S MATZOH BALLS

4 eggs, well beaten
½ cup water

Beat together well.

Add 3 tablespoons rendered chicken fat
1 teaspoon salt
Few dashes black pepper
1½ cups matzoh meal

Mix in metal bowl and refrigerator one half hour or more.

Shape into balls with wet hands. Don’t add more meal. You’ll get cannon balls!

Gently place balls in salted boiling water and wait until they rise to the top. Transfer to your hot chicken soup broth. ENJOY!

  12. The tiny nuance that the video-grapher missed was how Aunt Rosalie said…if you put too much Matzo Meal..from the canister she preferred was the measure's she had on the table. We all listened carefully as she said…too much Matzo meal would make Cannon Ball's. Everyone remember Aunt Rosalie say…1 and a quarter measure's…she did the quarter measure first then filled the full measure almost 4times, even using a knife to maintain the levels. Ahhh…but the written recipe said use 1 & ½ measures. Im not Jewish. But i live near a huge Jewish community…ive been to a Synagogue to hear an amazing Cantor sing. Ive attended Jewish weddings and have an affinity with the faith of Jews. Your Aunt Rosalie would be the first to give to people in the crisis between Israelis and Palestinian hungry people. Lets honor her by cooking Matzo Ball's to her spoken recipe. I will as i have had many Matzo balls in chicken broth, that just were a crumbly mess or they were Cannon Ball's …im even going to crack the eggs like she did….the chopped Parsley in the bottom of the soup bowls.

  14. Thank you for this method! 🥰 I’m boiling my matzoh balls separately, then putting them in the soup because of this video! I have carrots, shredded chicken, celery, dill, onions in the mix. I even put garlic in there which is something that’s NOT a typical ingredient! I couldn’t find Schmalz, so I used butter as a substitute! 🕎
