  2. This is a very good duck dish ! But as a local Beijinger who has been eating Peking Duck hundreds of times, I have to say this is not Peking Duck. The biggest difference, and the most challenging part, is the crispy skin. You skipped the most important step, air pump. That is right. You have to pump air between the duck skin and the fat/muscle underneath the skin. Without this step, the skin will be too soft, hence not Peking Duck anymore. That being said, this is still an excellently delivered dish. It is just not Peking Duck.

  3. Stupid question but what the hell is a cooling fan? Is it just a fan or am I missing something?
