Hey everybody and welcome to another episode of Sunday Cooking with Mom and Me. Order up!!! Coconut Pie’s coming your way! Mom’s coming through with another great recipe to satisfy your sweet tooth. I’m about to go try this out for myself. I’m always down for a good coconut pie. Coconut pie

¾ cup sugar
3 eggs
½ cup buttermilk
4 tablespoons butter, room temperature
1 cup sweetened coconut flakes
1 teaspoon vanilla extract
Regular Pie crust

Preheat oven at 325 degrees.

Pierce bottom of crust with a fork and bake at 325 degrees for 9 minutes.

Cream butter and sugar in a bowl. Add eggs one at a time. Add buttermilk. Add coconut and vanilla. Mix well.

Remove crust from oven and pour the custard into the crust.

Bake at 325 degrees for 40 – 45 minutes. Test for doneness by placing a toothpick in the middle of the custard. It is done when the toothpick comes out clean. Cool pie for 30 minutes. Enjoy with a dollop of cool whip, ready whip topping, or plain.

Going to add one half cup of buttermilk one-half cup of buttermilk now we’re going to add one cup of sweetened coconut flakes add one teaspoon of vanilla extract and that’s it that’s your custard i pre-baked the crust for actually nine minutes and i’m going to pour the custard into the crust

I’m just going to level it up this goes in the oven at 325 degrees for 40 to 45 minutes until it is completely set you can check to see if it’s done by using a toothpick i’ll be right back okay the pie is in the oven the temperature is set at 325 degrees

We’re going to allow it to cook for 40 to 45 minutes until completely set Let’s go ahead and give this a taste it’s creamy flavorful this is good this is really really good Enjoy You

    I'm sure that the buttermilk added more dimension and flavor to the pie than just using regular milk or half and half..

  6. I don't like coconut pie but it's my husband's favorite. His mother used to make it for him and his 7 brothers faithfully every Sunday until she got her call from the Lord almost 5 years ago. I made this recipe for my husband and brother in law 2 days ago and once it cooled it LITERALLY lasted about 15 minutes. They both were in tears and wondered if I found their momma"s old recipe. I'm soooooo grateful for you sharing this. ❤

  12. I have a question, now there is another recipe that uses cornstarch and coconut extract with vanilla and would that be any different as far as texture?
