My kids do not like school lunches so I have to come up with different types of sandwich variations and this specific sandwich is perfect for them.

Roasted Red Pepper Pesto Sandwich
For this sandwich, I used my basil and cheese bread. That recipe can be found in that specific video.

For the roasted pepper pesto

To make roasted peppers:
2 large red bell peppers
1 whole garlic bulb
Salt and pepper
Olive oil

Heat oven to 400 F.
Cut peppers in half and remove stems, seeds, and ribs from peppers. Arrange them cut side down in a pan. Cut the top off from your garlic bulb. Drizzle everything with olive oil and then sprinkle it with salt and pepper. Wrap the garlic bulb in foil. Bake in a preheated oven for 20-25 minutes.
Then take it out and remove the skin from the bell peppers. Transfer to a food processor bow. Remove garlic from the foil and squeeze out the cloves into the food processor bowl.

2 tbsp pistachio nuts
⅓ cup extra virgin olive oil
¼ cup grated parmesan
2 tbsp of fresh basil leaves
2 tbsp of fresh parsley
Salt and black pepper to taste

Add all the above-given ingredients to the food processor bowl. Process everything till your desired consistency. Take it out in a serving bowl and sprinkle some grated parmesan on top.

For assembly:
Cream cheese
Fresh Mozzarella cheese slices
Lettuce
Red pepper pesto
Tomato slices
Avocado slices
Homemade chopped pickled peppers
Grated parmesan
Black pepper

Spread pepper pesto on one slice and cream cheese on another. Arrange mozzarella slices and lettuce on it. Arrange avocado and tomato slices on top. Sprinkle chopped pickled peppers on it. Sprinkle it with parmesan and some black pepper. Slice and serve. Enjoy your homemade sandwich.
